More about Co-Moderator - Pablo Fernandez Pablo is from Florianópolis, Brazil. His background is in Engineering and Project Management, having worked for 15 years on greenfield projects in the energy sector. In 2019, however, he decided to take a sabbatical from his career and began formally studying wine, obtaining certifications in several wine courses in a short period (Professional Sommelier, WSET Level 3, Italian Wine Scholar at Wine Scholar Guild). In 2022, he started studying for the WSET Diploma certificate. Also, in 2022, Pablo became a VIA Italian Wine Ambassador. Pablo is now a VIA Certified Educator and aims to spread Italian wine culture to Brazilian audiences through his educational project called beboItalia, as he strongly believes in the potential of this market for Italian wines. A successful athlete with great skill, ball control, and a powerful shot with both his right and left legs, Hernanes played for various teams both in Brazil (São Paulo), Italy (Lazio, Internazionale, and Juventus), and even China, as well as representing the Brazilian national team (2014 World Cup and 2008 Summer Olympics). He won titles wherever he went, such as the Brazilian Championship twice with São Paulo, the Italian Championship with Juventus, and the Coppa Italia with Lazio and Juventus. As for wine, Hernanes had no previous contact with it and was abstinent until 2010, when São Paulo sold him to Lazio in Italy. From there, a passion for wine completely took over Hernanes. When he moved to Internazionale Milan in the 2013/14 season, the midfielder began to take his passion seriously. Things progressed even further between 2015 and 2016 when the Brazilian transferred to Juventus. Upon arriving in Turin, Hernanes visited several wine regions and became enchanted by Monferrato. At the time, he didn't own a house in Italy and thought it would be the perfect place to establish his residence, so he started looking for something there. During these searches, he found Ca' del Profeta, which he purchased in 2015. In addition to the Ca' del Profeta winery, Hernanes also owns Ca' del Profeta Ristorante & Relais, a wine tourism destination, and a wine bistrot in Turin called Luogo Divino. Today Joy Livingston interviews Hannes Rottensteiner from the Rottensteiner Family Wineries Stevie Kim and her team travelled to Dusseldorf, Germany this March to collaborate with ITA, the Italian Trade Agency. ITA was organizing some incredible Masterclasses featuring the best wines Italy has to offer. Each masterclass was led by the Master Sommelier Eros Teboni (awarded Best Sommelier Worldwide in 2018), and they wanted us there to document the amazing 3 days! About today’s guest and winery: It has always been clear to Hannes that he wanted to remain faithful to wine. He is the cellar master at the family wineries, working with his father, together they produce 16 different varieties of white and red wine. Hannes took on the job as oenologist in 2001 while his father concentrates on the viticulture aspect. THE ESTATE “More than 50 years ago our grandfather Hans had a dream: to produce his own wine. Grandpa Hans's dream is our dream today. The wine cellar was founded in 1956. In those years Hans gave priority to the sale of bulk wine in Switzerland. In the 80s, thanks also to the entry into the cellar of his son Toni, the work concentrated on the production of bottled wines. In 2001, his nephew Hannes, Toni's son, brought new support to the business. From the very beginning, not only the grapes from the ten hectares of the family vineyards were vinified in the cellar. The production was supplemented by that of about 50 local farmers. This collaboration has now become a tradition and is essential for the success and good quality of the wine. She is native to Colli Piacentini where she makes wines today. She is the last of three siblings and has a brother and a sister. She first started working with books and music and had her own store in Piacenza. In 1991, Elena Pantaleoni took over the family estate, La Stoppa, located in Rivergaro on the first slopes of the Apennins mountains and works accompanied by Giulio Armani. The Domaine extends over 58 hectares, of which 30 are planted to vines, and the remaining 28 are left to nature. La Stopa was bought by her family in 1973 and before was run by a lawyer named Giancarlo Ageno who discovered the place to be apt for winemaking and started the production of wines with significant and curious names such as Bordò, Bordò bianco, Pinò. Since the mid-nineties La Stoppa decided to mainly cultivate the local grape varieties : Barbera and Bonarda for reds, Malvasia di Candia Aromatica, Ortrugo and Trebbiano for the whites. More about Arrighi: “At first, when I was still a boy, I used to come to the cellar as a favor for my father . The activity I liked was staying in the hotel…I became passionate about viticulture in the early 90s, when we started experimenting with the Arezzo Viticulture Research Center… The experience with the Arezzo Viticulture Research Center led me to devote myself totally to the cellar and the quality of the wines, leaving my job as a hotelier to become a winemaker ” says Antonio. “The vineyard area was only 2 hectares. Today it is about 8 hectares and still expanding,” says Antonio… In 2010 The amphorae arrive Experimentation begins with the first terracotta amphora from Impruneta. “We were looking for a container that had the same micro-oxygenation characteristics as wood, but which, unlike wood, did not transfer substances to the wine,” said Antonio. “So we arrived at the amphorae , recovering an ancient tradition also present in the history of the Island of Elba”. Tresse of 2010 is the first wine in amphora of the Island of Elba , a "cru" composed of Sangiovese, Syrah and Sagrantino: it evolves in amphora for 18 months and continues aging in the bottle for 6 months. Felicity Lawrence’s book “Not on The Label” changed forever my understanding on environmental issues in production and packaging of food and drinks. Avoiding mass produced sugary abominations and promoting polyculture, biodiversity and a more conscientious lifestyle. Taking part in the first UK natural wine fair in Borough Market made me understand how a natural approach could have helped preserve wine’s interest. Not just wine as a homogenized commodity, placed in supermarkets and convenience stores but a diversity of distinctive fermented grape juice with a sense of place. Through my harvest experiences in Mendoza, Loire Valley and Penedes, I was lucky enough to understand that grapes are not just a raw ingredient in a manufacturing process but wine had a more socially responsible and ethical mission, the power to tell the story of its origin through passion, tradition, emotion, heritage, legacy and culture of those persons involved. Currently living in NYC, I am an Italian Sommelier Association Diploma (AIS) holder and Wine and Spirit Education Trust Advanced level (WSET) certified with a deep understanding and a holistic approach towards the business of food and wine. Unfortunately, consumers lack understanding of what wine and food is, let alone what authentic wine and food is. My objectives through the years pouring glasses to customers in Brooklyn was to help them progress in their journey, enhancing their dining and drinking experiences. In this episode Stevie is at Villa Cavendri in Verona and she is talking with Vittorio Frescobaldi More about today’s guest: Vittorio Frescobaldi is the Junior Export Manager - Benelux, Denmark, Italy at Crus et Domaines de France. He comes from a very famous Italian wine family, and he has a great interest in French strains, which is what he speaks about in his interview with Stevie! More about Frescobaldi: The name Frescobaldi has a tradition in the world of wine that dates back over 700 years and has since involved 30 generations. In the 60s of the last century, Vittorio Frescobaldi (Sr.), owner of the family properties together with his brothers Dino, Maria, Ferdinando and Leonardo, gave this tradition a modern organization by creating a winery with headquarters in Florence, nine properties in Tuscany and one in Friuli. It consists of over 890 hectares of vineyards, planted in very different soil and climatic conditions, from which 7 million high quality bottles are obtained every year. Difficult to make customers, admirers and journalists perceive such a varied reality. The Frescobaldi’s succeeded by exhibiting the characteristic elements of their most important estates in a hall, and offering visitors a virtual journey through their biodiversity, using all five senses: smell and taste, in the first place, tasting the most significant wine, paired with gastronomic specialties of the area, and identifying one by one the perfumes in the essences that the oenologist of the estate made available. It was a game in which sight, touch and even hearing were also involved, with specially chosen pieces of music being listened to. An original way to get to know the ancient Frescobaldi properties, the Pomino Castle, the Castiglioni estate, the Nipozzano Castle, but also the more recent ones, Castelgiocondo, Montalcino, Santa Maria, in the Grosseto Maremma, Luce della Vite, born as a joint- venture with the Mondavi of Napa Valley and then fully acquired, and finally the Attems estate in the Gorizia Collio. Montesodi and Mormoreto come from the crus of Nipozzano, and Lamaione from those of Castelgiocondo: the SuperTuscans that have given the most satisfaction to the Frescobaldis. Today, the family winemaker, Lamberto Frescobaldi, takes care of its production and with him three other representatives of the latest generation already work in the company: Tiziana and Diana Frescobaldi and Stefano Benini. Now a 14+ year veteran of the wine world, my humble wine career began at the Wine Cask Wine Store in Santa Barbara, California where I also grew up. Moving to Los Angeles in 2006 brought an opportunity to work at Silverlake Wine, where I worked my way up from holiday help to the manager. In 2009, my close friend Dustin Lancaster came to him with an idea…”I want to open a wine bar and I’ll only do it if you’ll do it with me.” The only acceptable response: “you tell me when and where.” In July of 2010, Los Feliz’s Bar Covell opened with a new spin on wine…ditch the traditional wine list and use your words. Bar Covell has a program of over 150 wines by the glass and the staff instead start a conversation/interaction with each guest to gage what they are in the mood for at that moment. This was just the beginning... I was graciously was named one of the Sommeliers of the Year by Food & Wine Magazine in 2013. In early 2015 with Lancaster and new partner David Gibbs, the trio opened Augustine Wine Bar in Sherman Oaks. Augustine has been named Best Wine Bar in American by Food & Wine Magazine and gets critical acclaim for its Vintage Collection of wines that it makes available by the glass and by the bottle on their in-house chalk boards nightly. Instead, it is certain that he is one of the greatest connoisseurs of wine tourism in Italy. His curriculum is public and easily traceable on the web, therefore we will not retrace the stages of his brilliant career here. We at FisarMilano know and appreciate him not only for his professionalism but also for his great availability . During the very sad period of the lockdown he kept us company for an evening leading us by the hand to discover some wines that he presented and described to us with loving passion . On this occasion we were also able to experience the more human side of his character: an affable and very courteous person like him, he then entertained himself to answer some questions that were posed to him, placing his many years of study at our disposal . The firmness and certainty of his answers may have made one think of a certain arrogance, a bit like some people who consider themselves "arrived". For him, however, this is not the case: he recently got back into the game by participating as a "student" in the courses organized by the Institute of Masters of Wine , which can only be accessed after having taken a very difficult exam, aimed at testing the deepest knowledge of the world wine. And while he is taking part in this "course" he directs his magazine Civiltà del Bere which is based in Milan at the Enoluogo wine shop where he can also be met and consulted for some buying advice. Each masterclass was led by the Master Sommelier Eros Teboni (awarded Best Sommelier Worldwide in 2018), and they wanted us there to document the amazing 3 days! More about today’s winery: The brothers Riccardo and Renzo Cotarella are two of the greatest exponents of Italian enology and their company, Falesco, produces some of the best Merlot, Cabernet, Sangiovese and Roscetto from all over Italy. Cotarella is a name to combine with Italian wine. The family, originally from Monterubiaglio , near Orvieto , began with a simple activity as local grape fermenters and wine producers that were used by larger bottlers of that important denomination. But it was the current generation, the brothers Riccardo and Renzo Cotarella, that moved far beyond these modest origins, becoming a real driving force in the Italian panorama. Riccardo Cotarella , the eldest, began his career as a winemaker of a local company, but, starting from the 80s, he forged a career, as one of the most important, probably the most important, wine consultant in all of Italy , creating wines acclaimed and award winners across the country and becoming both the president of the Italian oenologists association and also the co-president of the international association. All of this may seem enough to satisfy most people, but the brothers seem to be permanently dissatisfied with what others would consider a success and have set up their own company in Umbria , again an amazing force. Over 370 hectares of vineyards is by no means a small property, and the millions of bottles produced annually have found their way to the world’s largest high-quality wine markets. First with a series of well made and extremely pleasant wines at reasonably low prices, to demonstrate that quality and quantity are quite easy to reconcile. And, in more recent years, with a new line, clearly called “Famiglia Cotarella” , which offers superb examples of Merlot, Cabernet, Sangiovese and Roscetto , among the best wines in Italy. Despite the very limited quantities produced, Sonia's wines reach more than 20 countries in the World, are requested by some of the best restaurants and sophisticated collectors, and are appreciated by international critics (for instance Millesulmare 2016 has been included by Decanter in the list of the 50 Most Exciting Wines in the World). Sonia's mission is to protect Mount Etna's biodiversity and identify and work with ancient and almost extinct local grape varieties, while maintaining maximum respect to the Etna traditions, the environment and the local communities. Her work on ancient "reliquia" grape varieties is carried with the support of the University of Catania. Linked to her dedication to biodiversity, Sonia is also the co-founder of a company specialized in creating Sicilian Spirits with rare local ingredients. More about today's guest: Of Bolognese origins, but born and raised in Rome, Elisabetta does not come from a family of wine producers. Passionate about history, art and archaeology, however, she has always cultivated a passion for the countryside – her Bolognese ancestors cultivated peaches and maize – and, after working as a film producer in partnership with Luca Barbareschi, at the fateful 40 she finally fulfilled the dream of his life: to devote himself to the land by starting, almost by chance, to produce wine. The story begins in 1997 with the purchase of Borgo Scopeto in the Chianti Classico area , between Siena and Vagliagli . The Borgo, which today is a relais de charme called Borgo Scopeto Relais , is so spectacular that it was chosen by director Gary Winick to set part of his film "Letters to Juliet", starring Amanda Seyfried, Vanessa Redgrave and Franco Nero . The film, released in 2010 , surprisingly climbed the US charts : the presence, in a scene of the film, of Brunello Caparzo,positively influenced sales in the United States. But Borgo Scopeto is also a large farm that produces Chianti Classico and an excellent extra virgin olive oil .
