[01:00] It's Important To Prioritize Your Sleep So You Can Win The Day During sleep, your body and your mind will repair. Also, during sleep, your body will store hormones and burn fat. Sleep will let you make better decisions for the next day. When you're sleep-deprived, your ability to make good decisions goes out the window. REM sleep is recharging your brain, and it allows us to make good decisions. When the prefrontal cortex is energized and refreshed, we can make great choices throughout the day. [05:10] Mental Health: What Role Does Sleep Play? If you have ever been chronically sleep-deprived, you know how mentally terrible you feel. When we are not taking care of our mental health, it leads us back to making poor decisions. A lack of sleep can make us irritable, angry, frustrated, and even lead to road rage. Also, with a lack of sleep, your reaction time gets decreased. [11:20] What Is REM Sleep and How Much Do I Need? There are so many factors that go into how much REM sleep you need. 20% – 25% of your sleep should be deep, and the same goes for REM. Sleep is dynamic. You need to figure out how much REM sleep is optimal for you. If you wake up and you feel refreshed, mentally and physically, that's a good sign that you're getting enough REM sleep. [15:00] Why Do We Sleep, Anyway? It’s Great For Your Physical Body! Sleep helps with physical restoration. Growth hormones are released throughout the night. Sleep deprivation will actually impact the man’s testicle size. When you're not getting enough sleep, that throws off your insulin which leads to food cravings and food addiction. [18:30] You’re Not Getting Quality Sleep. That’s A Problem For Your Cortisol. Cortisol naturally should be highest in the morning. When you’re not getting enough sleep, your cortisol levels will stay high. If you’re not getting quality sleep, hormones are dysregulated. Then, your blood sugar will go all over the place. So, you crave sugar! When glucose goes up, ketones go down. [01:15] Complications From Insulin Resistance and The Standard American Diet It can take 15 to 20 years to develop insulin resistance. Parents don’t want to take food away from their kids like macaroni, pizza, and chicken nuggets. Kids will start metabolically flexible and can get away with eating anything. However, it won’t last forever. If you still want to buy chips, then Kristina will suggest buying chips with cleaner ingredients. Instead of buying Ben & Jerry’s ice cream, try a pint of Rebel ice cream. The most common contributing factors leading to insulin resistance are lifestyle issues like nutrition. If we ate real food, then we wouldn’t develop insulin resistance in the first place. Processed food is speeding our way to insulin resistance. [06:10] Are You A Sugar Burner? Here’s What You Need To Do Now There are three things we can do when we are trying to get well: Time Restriction: how often you’re eating and when you are eating. It’s critical to stop eating before bedtime. Caloric Restriction: if you’re going to eat garbage, then eat less of it. Dietary Restriction: take something out of your diet that is not healthy for you. It will be a vast improvement from the Standard American Diet. If you want results, try all three of these steps. 76% of the world population does not have the genetic adaptation for LCT. You should consider cutting out dairy; cow dairy is inflammatory for most humans. If you have skin issues, headaches, and extra flatulence, then dairy could be the problem. [11:50] The Importance of Testing For Glucose Values and Ketones Values If you are extremely insulin resistant, there is hope if you’re willing to put in the work. Plus, they provide your GKI. People should test every single day, especially in the beginning. That way, you can learn which foods are taking you out of ketosis. Plus, by testing, you can learn how many carbohydrates that you can tolerate. Some people can stay in ketosis at 50 total carbs or 75 total carbs. Everyone has their own carb tolerance. [18:50] What Is Nutrigenomics? It Might Be The Future of How You Eat The Human Genome Project was a project that spanned many years. Human DNA was mapped out to correlate to different nutrients and hormones. APOE4 is an old gene, and it conferred a lot of health benefits. One of the benefits was fertility in cold weather. You are exposing yourself to dangerous and useless risks. Most hormones have gone on vacation during this time. FHS is still around (follicle-stimulating hormone). One lucky egg will be developed. So, it’s a wonderful week for vegetables. The first two weeks of your cycle are all about developing your follicle – you will be more resilient to restrict carbohydrates. It’s a nice week for fasting because we don’t have progesterone. Week 2: After the bleed week and into the second week, it’s the week before ovulation. Ovulation is the main event – it’s the whole point of your menstrual cycle. Whether or not you want a child, that’s what your body wants to do. In this week, we see estrogen. Estrogen is designed for growth because we want to develop the follicle. The other hormone that comes up is testosterone. In this week, your interest in sex should go up. Week 3: Week three happens after your ovulation. Now, your egg can hang around and wait for sperm. The entire hormonal landscape is going to change. Back off aggressive fasting this week. Give yourself flexibility- we are much more sensitive than our male counterparts. Add resistant starches to your diet during this week. Resistant starches are foods that will resist digestion. It cannot be broken down in the small intestine. Instead, they will go into the large intestine. Luckily, they don’t count toward your carbohydrate intake. Some examples of resistant starches: green bananas, green plantains, raw potatoes, cold rice, Week 4: Peak week! During a blood test this week, all of the things will be down. Relax on keto this week and pump up the calories. Get out of ketosis – eat squash, sweet potato, and fruit. The average person is getting most of their calories from these oils. Without these seed oils, we would not have the burden of chronic disease. We were healthier 100 years ago, and we had no clue about vitamins, minerals, and supplements. The Great Exchange After a certain point, our body wants nothing to do with these unstable fatty acids. Two percent of daily calories should come from omega-3 and omega-6. We actually need more omega-3 than we do omega-6. The exchange of good fatty acids for bad fatty acids opens the door to chronic disease. Once we exceed the two percent amount of unstable fatty acids, then they end up in our body fat. We have a lot of people who are on the skinny side but are centrally obese. Our bodies cannot traffic these unstable acids properly. That’s why it stays near the fat lining of our intestines. Start eating the monounsaturated fatty acids. Clear your life of the seed oils. We Need More Omega-3s Than Omega-6s On a healthy diet, omega-3s are more likely to get damaged during cooking. For the amount that is ultimately absorbed, we need more omega-3 sources in the food that we eat. You can’t supplement more omega-3 if you have been eating a standard American diet. Instead, you have to cut the omega-6. If you reduce omega-6 without increasing your intake of omega-3, then your blood levels of omega-3 will start to rise. Oxidation science is very complicated, and there is a lot to consider. Fish Oil Is Highly Unstable Oxygen will attack the bond and destroy the molecule. Fish oil has two double bonds. So the oxygen is nine billion times more likely to attack. Fish oils can have five double bonds. It is so unstable that it rarely makes it off the shelf before it’s destroyed. The fish oil will turn into toxic compounds. People are getting toxic compounds from low-quality fish oils. [02:20] Why Austin Decided To Follow A Carnivore Diet Austin struggled mainly with digestive issues for most of her life. She suffered from chronic constipation and chronic pains with food. So, Austin tried a paleo diet and cut out diary. Eventually, Austin noticed that when she cut out certain vegetables, her digestion was getting better. Then, she realized more fats would make her feel better. It wasn’t until Austin went carnivore and cut out fiber that made her digestive issues go away. [06:30] Antinutrients Could Be The Reason For Your Symptoms Joint pain is a big issue. Antinutrients can also cause chronic constipation. Also, antinutrients can be hindering your mental clarity and sleep. Lastly, antinutrients may be causing low energy levels. Switching to carnivore can vastly improve mental clarity, sleep, energy, digestion, and joint pain. [08:35] Why You May Want To Ditch The Antinutrients Take away antinutrients to see if your health improves. Antinutrients will affect every person differently. To maximize stomach acid, prevent water 30 minutes before and after a meal. It takes our body more effort to digest cold water. Instead, drink room temperature water. When eating, it is best not to just stress the body and make sure that you can focus on the digestion of food. It’s one thing to get healthy for yourself, but Tim also teaches other people how to get healthy. Health is all about the right medicine, and the right foods for the right person at the right time. Tim grew up on the standard American diet. At age 37, Tim was gaining a few pounds every year. He developed eczema on both of his elbows. He had to stop wearing white shirts because he was bleeding on them. Plus, Tim had acid reflux 24/7. Later, during vacation, Tim got appendicitis and had his appendix removed. “My poor health doesn't affect just me; it affects every single person around me.” -Tim Tim’s friend got diagnosed with leukemia. However, around the age of five, our biochemical machinery starts to shut off the ability to break down lactose. In fact, at least two-thirds of adults are lactose intolerant. This means for most adults, the bovine proteins and amino acids in dairy are inflammatory. As for cheese, some are better than others when it comes to inflammation. Berry explains that the further the cheese has been removed from liquid milk, the less inflammatory in most cases. For example, hard cheeses like parmesan have been fermented for a long time and will cause the least amount of inflammation. A dairy-free month is great to determine if your issues, such as chronic inflammation, gut issues, and trouble losing weight, come from your intake of dairy products. Shocking! Another Inflammatory Food That May Surprise You A food that many people think is healthy, but is surprisingly inflammatory, is nuts. Even though nuts are looked at as a healthy snack, they are actually very carb-heavy and can slow down your weight loss. Cutting nuts out of your diet may seem restrictive, but not meeting your goals and being able to do whatever you want to in a day physically is really what is restrictive. A good way to eat nuts is occasionally, not every day. Eating them occasionally is probably fine because it mirrors our ancestors' behavior. He then decided that being a physician was more fitted to his style. After years in the university, he figured that he was also invested in doing research. As a physician, he can help people and do some research at the same time. In choosing a specialty, Dr. Fung felt that Nephrology suited his personality better. Nephrology is a complex specialty which is sort of a thinking-person speciality unlike cardiology which is more of an action specialty (i.e surgery) [4:13] Diabetes, Obesity and Intermittent Fasting The most common and important cause of kidney disease is Type II Diabetes which is closely related to weight gain and obesity. Treating kidney diseases with medications is the least effective way to treat people. You have to look at the root cause of the disease in order to be successful in treating it. Which is why, for Dr. Fung, the real question was “what causes weight gain?” Nutrition is not considered part of the medical specialty which explains why doctors depend on medications to treat certain illnesses. Second question: What are you gonna do about it? Obesity was not existent during the 1970s. Now, 70% of Americans are obese. Intermittent Fasting: People suffering with Type II Diabetes for 20+ years immediately felt better by intermittent fasting. Fasting is less fun that eating pizza and doughnuts. Fasting is tough work. It is important to give people undergoing intermittent fasting the support and education they need. [12:30] The Calorie Debacle Coca-Cola created a group called the Global Energy Balance Network to keep people focused on calories. They wanted people to think that 100 calories of broccoli is equivalent to 100 calories of Coca-Cola which is completely wrong. If you think that if you can eat cookies, drink coke and exercise then, you’ll be healthy, you are wrong. But, Coca-Cola wants you to think that this is right. Hormones control hunger, telling our body when to eat and when to stop. Different calorie sources elicit different hormonal responses. Diet and exercise are totally different things. Diet is what you eat. It affects the liver mostly. Exercise is mostly about skeletal muscles. Calorie is not a physiologic term. There’s no calorie-receptors in our body. We think that excessive intake of calories causes obesity. We think that this is a caloric imbalance. Too many ‘calories in’ compared to too few ‘calories out’ leads to weight gain. Sugars will be released into your body differently depending on your gut bacteria. [07:30] The Glycogen Concept Is Flawed – We Oversimplify It We never tap out our glycogen. You don't have to reduce glycogen by a significant amount if you're metabolically flexible. The glycogen in our liver is there for our body. Glycogen appears to be pretty steady no matter what you do. You don't have to deplete all your glycogen to go into fat burning. [17:30] People Who Burn More Calories Are Happier People who burn more calories are happier because of different hormonal states. Your body will interpret nutrients in your gut. Food is not fuel – it’s information. Your body doesn’t handle processed food very well, even protein powders. [24:10] Blood Markers You Can Use To Monitor Insulin Health You can do serum insulin, which is fasting insulin. You want that number as low as possible. This number should be around 2 or 3. When you eat, that number can blow up to seven times. If you start at 20, then you’ll go up to 140. If you keep doing that each day, then you have a problem. Most Americans eat in a fifteen-hour window – they are eating from the time they wake up to the time they go to bed. [26:05] Why Snacking Could Be Damaging Your Health Snacking causes a lot of issues. People are snacking between 19 and 23 times a day. If you are constantly digesting, then you aren’t recycling. When your body is resting, then it is in autophagy. So, your cells will start to work better. Autophagy allows new cells to come in and replace cells that have died. [31:40] Signs You Could Be Fasting Too Often Clum teaches progressive fasting rotations. Growth will start to kick in after a fast. You could lose 97% of your new cells if you don’t end a fast in the right way. It is rare that you lose lean body muscle from fasting. His lifestyle started to have a pretty massive toll on his body. Dorian’s weight had ballooned way over 200 pounds. Plus, Dorian was on antidepressants, and his job was going terribly. It’s better to eat fruit than a smoothie. In a smoothie, you have really pulverized that fiber. Any sort of carbohydrate that is has been processed is really going to spike your sugar. However, if you are working on actively healing your reactive hypoglycemia, you may need to eat more frequently. Most of the time, snack foods are high in carbohydrates. She started her career in nutrition by working in the ICU. Many people came into the ICU for lifestyle-related chronic conditions. For instance, people would be in the ICU due to an urgent amputation because of uncontrolled diabetes. At the ICU, Kara would see really severe problems that could have been prevented in the first place. So, Kara wanted to catch these issues way earlier in a way that was meaningful. After discovering CGMs, Kara realized how powerful of a tool they are for multiple reasons: They give us continuous insight into our metabolic health. CGMs are motivating for people. Lastly, the data you receive is personalized and actually works! [06:35] What You Need To Know Before Getting A CGM The CGM is a small device, about the size of a quarter. It’s a medical device, so you need a prescription in order to receive it from your doctor. Sadly, they're most likely not going to do it unless you're a diabetic case. If you're generally a healthy person who wants to stay healthy, the chances of your doctor writing you a prescription is slim to none. The device goes on the back of the arm, you push the button, and it’s in there. It uses a needle for insertion. The needle is removed, and the only thing that's left below the surface of your skin is a flexible microfilament. The devices are factory calibrated, so there's no blood needing to be drawn. [10:45] What Should Your Blood Glucose Levels Be? When you’re thinking about fasting glucose, Kara recommends 70 to 90 range milligrams per deciliter. If you Google, “what's a healthy fasting glucose level?” It will probably tell you 70 to 100. There is research that indicates when we get to that 90 to 100 range, we're starting to see some increased risks. Shoot for 70 – 90 most of the time. After a meal, we want to see it returned back to baseline values, usually in that two-hour mark. Check how high your levels went after you ate – aim for 140 or less. On a keto diet, it shouldn’t go above 120. [15:00] Insulin Mediated Glucose Responses And Non-Insulin Mediated Glucose Responses After Exercise Our glucose can spike, and our body can deal with that glucose spike without utilizing insulin. The spike we get from exercise happens after a very high-intensity workout, or you're doing something rather strenuous. It makes sense that you're going to have a glucose spike because your current supply of energy in the body is not enough to meet the demands that you're placing it under. With exercise, we're simulating stress hormones, but we're also breaking down glycogen stores. The exercise is demanding energy, and it's getting used right away. The reason your body is stimulating a glucose response with high-intensity exercise is that it needs it. [20:35] When You Are Chronically Sleep Deprived, You Will Have Higher Levels of Cortisol The Next Morning When we think about optimizing glucose values, we always talk about diet, exercise, stress, and sleep; they're equal components of the picture. [02:20] All About Drew’s First Fit2Fat2Fit Experiment In 2011, Drew did his first Fit2Fat2Fit experiment. As a personal trainer, Drew had never once been overweight a day in his life. However, Drew’s clients were overweight pretty much every day of their life. Unfortunately, Drew couldn't understand why it's so hard for them to follow the meal plans and do the workouts that he gave them. So, Drew went on a journey to gain a better understanding of what it was like to be overweight, and he put on 75 pounds in six months. Drew learned that he was totally wrong in his approach to helping people transform. [10:05] Dealing With A Breakup Was The Hardest Part of Fit2Fat2Fit Drew and his girlfriend broke up during the Fit2Fat2Fit experiment. Many people ask if the breakup was because of this journey, and the honest truth is no. Sadly, they had problems before the journey even started. However, the problems were amplified because of Drew’s unhealthy physical state, which affected his emotional state. When you’re unhealthy, your ability to handle stress is severely diminished. Plus, you're more reactive, and you're in survival mode. Overall, unhealthy living causes a lot more issues in whatever relationship you're in, whether it’s romantic, friendships, or family. Drew’s body would almost fight back against him with cravings to eat the processed food because he had trained it for so long to eat that. People go hardcore keto, and they don't take adequate time off of it. When you do that, you lose a lot of the mitochondrial machinery to process glucose. Eventually, you will become glucose intolerant, and you will not oxidize glucose as efficiently. Some keto people have a "cheat" meal, and they will feel like garbage. If you eat a sweet potato, you shouldn’t feel like garbage. In fact, carbs aren’t bad for you. The overconsumption of carbs has messed us up. [07:35] Fat-Adaptation VS. Keto-Adaptation: What’s The Difference? Fat-adaptation is where your body knows how to oxidize fat. Your body understands how to use free fatty acids as a fuel source. Keto-adaptation is where some of your fatty acids go to the liver, and the liver converts them into ketones. Someone that is an endurance athlete can be fat-adapted but not necessarily keto-adapted. Keto is how long you're actually exposing yourself to beta-hydroxybutyrate. The goal is really to get keto-adapted. [09:40] What You Need To Know About The Gibbs Free Energy Equation When you produce energy within the brain you always have an abundance of free energy used for other things. That extra energy will get channeled somewhere else. Ketones burn so much cleaner, so you're left with more energy. You have less energy that is getting oxidized and less energy, ultimately resulting in oxidative damage and more energy available – free energy! Evan Transue | How to Heal Autoimmune Disease For Good! KKP: 264

Today, I am blessed to have here with me Evan Transue. Evan had a secret, and that secret was his mental health problems. Starting as young as five years old, Evan was experiencing full-blown panic attacks. His parents and family doctor were left with confusion about his symptoms, and as a result, these issues were unintentionally forgotten about. As time went on, his mental health issues progressed. Evan was embarrassed of what he was experiencing, so he did his best to hide his problems from friends and family (at least, whenever possible). The more he hid, the worse the problems got, and the worse the problems got, the more he tried to hide them. Eventually, Evan even used drugs and alcohol to try to cope with what he was dealing with. It was a bad cycle that he would not be able to maintain forever. During his senior year of high school, everything would change. While trying to stop abusing drugs on a daily basis, Evan "snapped" and got himself involved in an altercation that would result in him being arrested, kicked out of school, and spending his 18th birthday on house arrest. He still wouldn't admit it, but his actions made it clear to everyone around him that he was not doing well. The only person he was lying to was himself. A few months later, Evan would have what he calls his "aha" moment. This was the moment he gained a new perspective on his situation, realizing that if he never took the first initiative, things were never going to get better. ​Over the next several years following this decision, Evan would finally discover a resolution to his mental health issues (and his physical health issues, too)! They can become brain, skin, muscle, bone, whatever is needed. However, we can't call a cell in an adult human an embryonic cell. So we changed the name to the stem cell. The idea that the general population holds is that genes turn on and off and, in the process, control the expression of our cells. Lipton, however, found while cloning stem cells that taking genetically identical cells and putting them in different environments made the cells show an expression that fit that environment. This shows that the expression of cells is not controlled by genes but by signals from the environment. [16:54] How Energy Frequencies And Our Cell Receptors Intertwine Cell receptors are like antennas that receive signals. Chronic Inflammation First off, there are good and useful inflammations. Acute inflammation is where you get injured from a sprained ankle, for example, the swelling there is good; it's the first step in healing. Acute inflammation is not what we are talking about today. The enemy; is chronic, inappropriate inflammation. This inflammation is almost always caused by something in your environment getting into your body. It can be caused by something you eat, drink, or chemicals and toxins that you are exposed to in your environment. This leads to chronic inflammation in your body while it is trying to cope with the everyday insult of the toxins. [09:50] Metabolic Health: Inflammation, Obesity, And The Concerns Around Dairy Products Up until about year five, children drink milk regularly and are able to process it well. However, around the age of five, our biochemical machinery starts to shut off the ability to break down lactose. In fact, at least two-thirds of adults are lactose intolerant. This means for most adults, the bovine proteins and amino acids in dairy are inflammatory. As for cheese, some are better than others when it comes to inflammation. Berry explains that the further the cheese has been removed from liquid milk, the less inflammatory in most cases. For example, hard cheeses like parmesan have been fermented for a long time and will cause the least amount of inflammation. A dairy-free month is great to determine if your issues, such as chronic inflammation, gut issues, and trouble losing weight, come from your intake of dairy products. [18:30] Shocking! Another Inflammatory Food That May Surprise You A food that many people think is healthy, but is surprisingly inflammatory, is nuts. Even though nuts are looked at as a healthy snack, they are actually very carb-heavy and can slow down your weight loss. Cutting nuts out of your diet may seem restrictive, but not meeting your goals and being able to do whatever you want to in a day physically is really what is restrictive. A good way to eat nuts is occasionally, not every day. Eating them occasionally is probably fine because it mirrors our ancestors' behavior. [23:23] Why The Carnivore Diet Is Beneficial For Reducing Inflammation The carnivore diet, by definition, is the lowest carbohydrate diet you can eat. It is as close to zero carb as you can get.
