S7 Ep 1836Ep. 1836 What does 'natural' mean in wine? Pt. 4 | Everybody Needs A Bit Of Scienza
Welcome to Episode 1836. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 4 of 4. The seminar’s abstract: The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist. While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made. Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read. If you want to learn more about the Professor: The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. Today, he will be interviewing Rocco Toscani More about today’s guest At the end of the 60s my father Oliviero Toscani had enough courage and vision to build his own house in Casale Marittimo: a tiny hamlet on coastal Tuscany, up on the hills and a few kilometers from Bolgheri. He purchased a small farmhouse with some land all around and brought two horses. Every year he used to invest all his savings buying land. He did not believe in bricks but he did believe in the land. He was damn right! My father has always been a determined, subversive and visionary creative. These very qualities made him achieve an exceptional career and build a farm of indisputable beauty. After planting more than 4000 olive trees, raising Appaloosa horses, Cinta Senese breed pigs, Angus cows and homing pigeons, we felt like our project was missing something: a vineyard. 12 hectares of amphitheater-shaped vineyard at 350 meters above sea level with a breathtaking view on the Tirreno Sea. Thus, I, Rocco, was born and raised in this beautiful land which one never wants to leave and where one always wants to return. I’ve learnt the country life-style, its cycles, rhythms as well as its strengths and weaknesses. I’ve learnt how to recognize animals, every piece of land and every plant individually. My job as a photographer took me abroad to study and work. Eventually in 2014 I realized that this country had always been my real passion, so I decided to go back home to Tuscany. Today, with the precious help of the winemakers Attilio Pagli and Valentino Ciarla, and agronomist Stefano Bartolomei, the winery has become an artisanal production where the care for our environment is at the first place, and a sustainable production are the base of how I conduct the vineyard. My goal is to optimize the strengths of the vineyard and its terroir by producing wines that had never been experimented before in this area, making wines that reflect the features of their own grapes from their crisp freshness to their fascinating force. I’ve managed to change the cultivation method of the vineyard from a traditional one to the organic wine production by bringing back useful bugs instead of using chemical methods. The same goes in the cellar, low intervention wines with very little use of sulphites. All this makes this project extremely hard but very fascinating. Welcome to Episode 1826. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 3 of 4. The seminar’s abstract: The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist. While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made. Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. The event is a key annual reference point for wine producers and wine professionals from around the world, providing an opportunity to network, develop and expand their wine business worldwide. Abstract: Wine consumption in France has changed a lot in the past decades. Alongside a fall in consumption in terms of quantity, there has been an increase in consumption in terms of quality. There have been deep changes in habits and in people who are buying wines as well: yesterday’s drinkers are not today’s drinkers, and these changes can be advantageous for Italian wines to develop in France. Today, France is the second biggest country in terms of wine consumption, after the United States and before Italy. Since France is a wine-producing country, the majority of wines consumed there are French, while only 6 % of the wines French people drink are produced outside of France. This 6% may seem a small amount, but it is worth 900 million €. Italy is the favorite wine-producing country in wine stores (private and little chains) and restaurants (Italian restaurants, but also French restaurants). Today, producing organic wines made from local grapes is a plus for wineries that want to enter the French market, so wineries should communicate those aspects on their websites and social networks. Price can be a critical issue since Italian wines can be more expensive than French wines due to import charges. Offering different wines with entry-level, mid-level and high-level price ranges might help. More about today’s speaker: Fanny Breuil is from Angers in the Loire and have always been into wine. She studied agronomy engineering and oenology. First, she worked as a winemaker (France, Italy, Chile) and then as a salesperson for a wine importer in the USA. In 2008, She founded her company Genuine Wines with a deep willingness to help winegrowers located in lesser-known or underappreciated wine regions (but that had great potential). She started with Jura and Emilia Romagna. Since then she has been helping them with their export markets as part of each team. These are French and Italian domaines. S7 Ep 1815Ep. 1815 What does 'natural' mean in wine? Pt. 2 | Everybody Needs A Bit Of Scienza
Welcome to Episode 1815. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 2 of 4. The seminar’s abstract: The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist. While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made. Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read. If you want to learn more about the Professor: The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. He inherited an old vineyard from his grandfather Roman and he decided to realize his dream in the Goriška Brda Region. The cultivated grapes are the natives: Ribolla Gialla, Tocai Friulano and Malvasia Istriana. Of course, he followed the idea of Wine-Terroir and therefore the name of the wine is Brda, which is the Slovenian translation of Collio. The slopes are covered with terraced vineyards and the soil is called Ponca or Opoka. He has always loved macerated wines with spontaneous fermentation, and he has been experimenting with this method for years, now, Brda is the realization of it. After finishing his enology studies in Alba, he worked for three important wineries in the area, all the while continuing to help out his father and contributing to the conversion of the family farm to a full-fledged winery. In 1988 the first 5,000 bottles of Barolo, Dolcetto, and Barbera were placed on the market together with a small production of Chardonnay. However, the turning point came in 1993 when all the family’s grapes produced were vinified and bottled. In 1995 Sergio bought about two hectares of Cerretta and started the challenge of producing white wines in Alta Langa, planting the first vineyards of Chardonnay, Reisling in Cigliè. In 1997 he married Elena Bonnelli who has given great support to the winery, helping Sergio with business administration as well as hospitality. The family then grew with the joy of the birth of two children: Elia born in 1998 and Maria born in 2001. After a few years, Sergio purchased another hectare in the vineyards of Prapò (2002), Lazzarito (2002), and Pradone (a parcel of Lazzarito) and also another parcel in Cerretta(2001). In 2010 Sergio’s mother inherited from her cousin Tommaso Canale half of a hectare in the most historic and famous vineyard of Serralunga d’Alba: Vigna Rionda. Sergio’s goal is to express the territory and the character of the various vines, trying to express elegance and finesse in the wines, which as a Piedmontese tradition, are generally combined with gastronomy. Today, he will be interviewing Michael Caines MBE More about today’s guest Michael has built his reputation on a highly personal and distinctive modern cuisine that celebrates the finest local and seasonal produce and ingredients from Devon and the South West along with drawing on influences from his travels around the world. Michael appears regularly on Saturday Kitchen, and has made numerous appearances on MasterChef, The Great British Menu, Sunday Brunch and other broadcasts. He has numerous business interests and is extensively involved in community and charity work. Michael held two Michelin stars for 18 consecutive years before he took the leap of faith to create his own country house hotel. Just six months from opening Lympstone Manor, Michael and the team were awarded their first Michelin star. Amongst his many accolades, Michael cooked in 10 Downing Street for the Prime Minister, was awarded AA Chef’s Chef of the Year in 2007, and received an MBE in 2006 for services to the hospitality industry. In 2015 he was made freeman of the City of Exeter “in recognition of his outstanding services to the field of cookery which has led to Exeter’s name being known around the world as one which supports cookery”. More recently, Michael has been honoured to be named Deputy Lieutenant to the Lord Lieutenant of Devon. Michael retains his Michelin stars along with his five AA Rosettes for Lympstone Manor. Welcome to Episode 1804. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 1 of 4. The seminar’s abstract: The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist. While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made. Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. Following the sudden passing of Gianni Masciarelli, 18-year-old Miriam Lee replaced her father as the winery administrator and, while studying in Rome, started working as a junior brand manager. After graduating in Economics and Management at Luiss University of Rome, Miriam first worked in New York for a wine importer company and, then, for a PR and communication agency specialized in wine & beverage: these experiences added to those Miriam had gained on the field, working in a few restaurants during her high school years. In today's episode, she interviews Enore Ceola About today’s guest Born in the heart of the Prosecco region, Enore Ceola grew up on a winery bordering the Friuli and Veneto regions of Italy. He graduated from the Institute of Technology at Pordenone with a degree in architecture. He had a brief stint as a civil engineer before deciding to drop everything to marry the love of his life after a two-year courtship. In early 1997, he returned to his family roots and reached out to Mionetto for employment prior to leaving for the U.S. With a stroke of luck, the Director of U.S. Exports position had been vacated and Enore was promptly introduced to the entire Mionetto family, leading him to immediately accept an offer. Soon he found himself in NYC, introducing not only Mionetto Prosecco, but also the Prosecco category itself to the American market. By 2000, Enore had achieved success in the competitive NY market before traveling across the country educating people about the world of Prosecco and the rich history of Mionetto.
