In 2012, the Australian culinary landscape was experiencing a Mexican food wave. But there were a few things missing. Mexican-born Gerardo Lopez especially lamented the lack of traditional corn tortillas. He got busy researching, testing, and eventually making tortillas from locally grown grain.
