Cooking certain foods with high heat causes something called the “Maillard Reaction” – which is a chemical reaction between fat, proteins, and sugars that gives browned and seared foods, like barbecued meats, their flavor. A very common question we are asked as it relates to functional medicine testing is how medications and supplements affect results. Although we can’t always know the influences, based on physiology and some literature we can make educated guesses. In functional medicine, the focus is on getting to the root cause of disease. Sometimes subtle nutritional insufficiencies can result in significant clinical consequences. By measuring steps in biochemical pathways called organic acids, we can uncover nutrient cofactor needs. One important biochemical process is the kynurenine pathway. The enzymes involved are highly dependent on vitamin B₆. Knowing this, abnormal organic acid levels within the kynurenine path can reveal vitamin B₆ insufficiencies.
