Co-Moderator Matt Irwin grew up in Brisbane Australia and graduated with a Bachelor of Business in Hospitality Management before moving to Europe to work as a Tour Manager for Contiki Holidays. It was whilst living in Venice, Italy and leading tours throughout Europe that his love for wine began. Moving to Calgary, Canada in 2005 with his Canadian wife, he started selling some of Italy’s greatest wines to Canada’s best restaurants and wine shops. Returning to Australia in 2012 to Sydney, he spent 11 years working for Australia’s best Italian Wine Importer, Trembath and Taylor where he championed many of Italy’s greatest growers and winemakers. Beside them, there is also Giuseppe, Alberto's son, of the seventh generation. Luca is the “youngest” member of his generation at 43 years old but he has already a huge amount of experience. From 2002, he has started working full time in the winery and he has been involved in every activity of the cellar. After several years of mentoring from his father in and his cousins in production activities (viticulture, winemaking,packaging and sales & marketing. Naturally, being completely a family run company, Luca is involved in all parts of the the management and production in the winery. There they conducted dozens of interviews with some of Italy's most inspiring producers. Join the fun every Thursday afternoon! Tune-in each Thursday as we bring you the great interviews that unfolded over the course of 3 days. More about today’s winery: The core of our company’s philosophy is commitment to the landscape; we are only guardians of Nature and must act to preserve and respect the land with decision making in accordance with the season. We cultivate or cover crop according to the vigour of the vines, we manage with a focus on soil heath, we use sulphur and copper in response to the weather and we adapt canopy heights according to the natural shoot growth. To achieve this, we improved old vineyards and established new ones with traditional vine densities of 8,000 to 11,000 vines per hectare. We source the cuttings for new vineyards exclusively from our old vines (over 100 years old). Our yields are less than 1 kg/vine and we have achieved a vine balance that highlights the characteristics of the land. Organic fertilisers, green manure, low amounts of copper and the use of herbal teas based on horsetail and nettle, all contribute to make our vines the core of our production process. Since 2019, he has been the ambassador for Italy at the ‘International Wine Challenge’ in London. ---- Andrea Lonardi MW was born in Valpolicella, graduated in Agriculture from the University of Bologna and has a Masters in Management Control from the Grande École of Montpellier. After training internships in Languedoc and Sonoma, Lonardi began his career in the top wine division of the Italian Wine Group (GIV), working in Marketing & Sales. In 2005 he led the reorganization project for the wine-growing part of the group. He focused on the most important Italian wine territories, overseeing more than 1,000 hectares of vineyards and 13 estates from the Alps to Sicily, in his role as group Viticultural Coordinator. Lonardi also oversaw the oenological aspect of several projects, beginning in 2008. He became the Chief Operating Officer of Bertani Domains in 2012. Known today as Angelini Wines & Estates, Lonardi manages production reorganization for the company, development of the group concept, construction of the product portfolio and business development. He continues in research, production and distribution development in the world of fine wines at AW &E. She grew up in the countryside and helped run the family business producing fruit, tomatoes and wine. After graduating in agrarian studies with a technical-economic focus, Paola has worked for a year in Roma for a company that dealt with research in agriculture. In particular, she followed the various phases of development of the national vineyard register by carrying out monitoring in various regions of Italy, surveying existing vineyards and verifying their accuracy by aerial survey of the territory. The year 1991 was a turning point in her life because she met Buddhism, which she still practices today, and decided to return to her family to take care of the business with her parents. In 1996 she married a musician who is still her life partner with whom she has four children, a boy and three girls. The first vines planted by a Mustilli was back in 1700’s but the family estate has been created in 1960 by her father, leonardo Mustilli who rediscovered the local indigenous grape varieties, including Falanghina. Today the domain spreads over 15 ha. The winery is awarded the Best Biodynamic Red Wine 2023 Trophy for Toscana Igt Sangiovese Vino Biologico Capocuore 2021 in Wine Without Walls, a section of 5StarWines – the Book wine selection in 2023 More about today’s winery The Poggio Trevvalle agricultural company has its headquarters in Campagnatico, in an area in which the DOCG Morellino di Scansano and the DOC Montecucco intersect and overlap. The farm was purchased at the end of 1998 by the brothers Umberto and Bernardo Valle, who personally take care of the 13 hectares of vineyards on the property, located around the cellar. Sangiovese, a typical grape variety of the region, dominates the vineyard, while Merlot, Alicante and Cabernet Sauvignon are also grown in small plots. The idea that inspires all of Poggio Trevvalle's production is to produce natural wines, pleasant to drink even immediately, but, above all, which have their own unmistakable distinctive character, which makes them unique. To pursue this objective, the elements such as soil, flora and fauna must be absolutely natural, and it is for this reason that the Valle brothers immediately began organic production from the vineyard to the cellar. All the grapes produced, harvested at very advanced ripeness to attenuate the tannins, are destemmed and pressed within two hours of harvesting and undergo an initial fermentation in steel tanks at a controlled temperature, using only indigenous yeasts, while the malolactic fermentation takes place in tanks in concrete or in large wooden barrels for Sangiovese and Alicante, while for the other vines such as Merlot and Cabernet Sauvignon it takes place in steel or in small wooden barrels; only after this second fermentation are the different blends made. In the Italian wine scene, the wines produced by the Poggio Trevvalle winery stand out for their naturalness combined with great pleasantness and an absolutely interesting quality-price ratio. More about today’s guest Bilena Settepani is a talented young entrepreneur, and pastry chef, raised in a family of both bakers and restaurateurs, and from a young age, she was immersed in the world of food and hospitality. Bilena’s first word was “Dabo” which in Ethiopia means bread; many of our patrons have seen Bilena work every position from starting as in her early teen’s maître d, bussing, waiting tables, bartender, manager and more as she studied and even on the side as she started a career in fashion. When the pandemic hit she dropped everything and quit her job to step up and take care of the family's business while the Settepani family like everyone else was facing hardship in all aspects of life. Bilena's passion for pastry began at a young age, as she would spend time at both locations but always trying to get her hands on the action and was always curious to try things. Her love for food goes beyond the kitchen as she also runs our monthly classes. After receiving a degree at High Point University, she attended Institute of Culinary Education where she honed her skills and developed a deep appreciation for the art of pastry making. After graduation, she worked in some of the top pastry kitchens in the world, gaining valuable experience and perfecting her craft. Today, she will be interviewing Alessandro Pasqua More about today’s guests Alessandro is a third generation member of the Pasqua family. The Pasqua family founded Pasqua winery in 1925 in Verona, in the heart of Veneto: a countryside city between the stunning Venice and the Garda Lake. Verona is a Roman Empire-founded city and the “capital” of Valpolicella, one of the most dedicated Italian wine regions. Pasqua is one of the historical wineries in Verona, and still, it is completely family owned. With his father Umberto (President) and his brother Riccardo (CEO), Alessandro represents the new management of the winery. Alessandro first joined the winery in 2014, and in 2016 assumed the role of vice president, North America, overseeing the business in the United States and Canada. North America is one of the Pasqua brand’s fastest-growing market.
