Today I’m talking about statistics to do with food and health that everyone should know.How much it costs us every year, where it sits on the list of the biggest contributors to ill health and death globally, what the impact of good food actually is and how bad people are currently eating according to current guidelines.I don’t think many people appreciate these numbers. I get a lot of glossed looks whenever I talk about the impact of poor food on health outcomes, particularly with certain medical professionals. It’s often seen as an inevitability and the nonchalant nature in which we address the foundations of ill health is seen within these statistics. We all need to do better.There is huge potential for improved health if we simply encourage and empower people to eat well everyday and that will have a knock on effect on productivity, wealth, happiness, relationships and so on. Therapeutic diets are promoted everywhere and for a multitude of symptoms. Whether it’s low fodmap, sibo diet, low carb, low histamine and of course elimination diets.But what is the actual evidence for these? And how do we personalise them to us?On the podcast with me today is Ben Brown, my go to expert when it comes to anything nutrition and supplement related. Ben is founder and director of the Nutritional Medicine Institute, an educational, advocacy and research group committed to advancing the science and practice of nutritional medicine.Ben is on the academic advisory board and a guest lecturer at BCNH College of Nutrition and Health and guest lectures at the Institute of Optimum Nutrition and the Centre for Nutrition Education & Lifestyle Management. I have the Queen of Spice from Ren’s Kitchen on the show today talking about everything to do with sourcing and investing in the best spices for your food, not just from a nutritional standpoint, but a flavour perspective too. I’ve always been a fan of spices for their medicinal properties, but today I was blown away by how much Ren taught me about spices and I was shocked at how different spices can taste in their raw whole form.Ren has been in the spice business for years and has some of the best chefs and restaurants use her spices. Tom Kerridge, Bubala, Palomar, Raffles hotel, Ottolenghi to name a few.Remember, spices add diversity to your plate – they count as 1/4 point each and we’re aiming for 30 different plant points a week! Even used in small amounts, the addition of spices is suggested to improve gut microbiome composition and reduce markers of inflammation. She’s a force, and I love her energy. I think you will too.Soaking and sprouting is clearly something Karen believes we should be doing more of. And if I think back to traditional methods of cooking in my families kitchen, these vital steps are things that we wouldn’t have skipped. Soaking peas, nuts and seeds. Combining specific spices and herbs with them. This is an artform that increases the nutritional value of our food, but is rapidly being lost as we move toward more convenience and speed. Something that I realise I’m guilty of myself in todays podcast.Karen and her company, Happy Tummy Co inform people about the need to spend more on health, invest in the soil and re-engage with the food supply. I love the message and the enthusiasm. I’m always on the search for better sleep. I’ve tried supplements, better pillows, meditations but there always appears to be a day or 2 in my week where I don’t sleep well. And on the one hand, I was pleased to find out that that’s about average and that’s not particularly abnormal, but I still want better sleep.Today, Dr David Garley is on the podcast, he works as a GP in Bristol and is director of The Better Sleep Clinic. #233 Processed food, sugar, spices and British Colonial History with Sathnam Sanghera
Sathnam Sanghera’s journalism has covered far reaching topics including racism, homophobia and even pianos in train stations which he bizarrely doesn't like. But when he decided to turn his attention to Empire and Britain’s colonial history, the backlash he received from the public and even some historians was fierce and unnerving. In fact, Sathnam has received abuse online, ridicule and even death threats.As a person of Indian heritage with their roots in the divided provinces of Punjab and Bengal, I thought I knew a lot about British history. But I didn’t realise how little I knew until I read Empireland and watched some of Sathnam’s incredible documentaries on Channel 4.Today we tell the story of British Imperialism through the lens of food. Spices, Sugar, Potatoes, Cauliflower and even processed food. These are all ingredients I thought I knew about! But when you dig a little deeper you can uncover just how incredible our past is and what we can learn from. As we negotiate a new relationship with the wider world, it’s never been more important to understand the nuance of our national history. At no point in todays discussion do we refer to Empire as either good or bad. Like the weather or our relationship with our immediate family, it’s complicated. I also think the medium of social media is the wrong place to have these discussions that require compassion instead of judgement as we wrestle with uncomfortable and sometimes brutal historical truths. I hope todays discussion will enable you to cherish food in a new light that appreciates its complicated past, as well as how grateful we should be for the variety and selection that adorns our market shelves.Sathnam Sanghera was born to Punjabi immigrant parents in Wolverhampton in 1976. He entered the education system unable to speak English but went on to graduate from Christ's College, Cambridge with a first class degree in English Language and Literature. He has been shortlisted for the Costa Book Awards twice, for his memoir The Boy With The Topknot and his novel Marriage Material. One of the best experiences I had in a restaurant was when I sat at a table in Marylebone (London), decorated with floral cloths and comfy pillows. Nestling into my seat I was struck by beautiful spicy notes, warming ginger that mirrored the welcome from the maître d'. Perusing the menu, almost everything was a blend of cultures, cuisines and flavours. Dishes that are so unfamiliar, yet deserve to have a home. This restaurant and cooking style, which is proudly inauthentic, feels deeply authentic and full of love, and you can understand why when you learn about the experience of its founder, Ravinder Bhogal.Ravinder is a journalist, chef and restaurateur, who was born in Kenya to Indian parents. Basically one of the most influential women in food.Jikoni is one of my favourite restaurants and now ‘Comfort and Joy’ (Ravinders 3rd book) is one of my new favourites too! It’s one of those cookbooks to read, but also one that deserves to have its pages stained and spattered. Ravinder’s commitment to lavish vegetables with the same joy and creativity you’d bring to a steak or a chop has resulted in a globally-inspired collection of recipes.There are fragrant and fortifying curries and stews including a mango and golden coin curry; hefty salads packed with fistfuls of good things such as heritage tomato salad with lime leaf dressing, ginger and chilli.
