Scott McCalman (Jedburgh Farming - Liverpool Plains) - focused and furious
We continue our Fighting for the Liverpool Plains series in this discussion with fourth-generation farmer Scott McCalman. Noone has more reverence and deep knowledge about the black soil of this extraordinary growing region - how it came to be there, why it’s so precious, and how best to look after it for the benefit of farmers, eaters and the climate. Educated and forward-looking, Scott is using and caring for the land with an eye on the future. He’s furious with those motivated by short term gains. Just about everything we do at Dirty Linen and across the whole Deep in the Weeds food podcast network rests on farming. Without productive farmers we don’t have restaurants, we don’t have those resonant, connected stories of cuisine and culture that we love so much - and that we know you appreciate too. And fundamentally, without farmers, we don’t eat. It’s basic. We also know that we need to cease coal and gas mining because of the emissions they create. The science is unequivocal. The catastrophic climate risks are too great. The move to net zero makes allowances for legacy mining but it’s clear that any new coal or gas extraction tips into dangerous territory. Given all this, we are keeping a close eye on the Liverpool Plains, and the gas mining exploration licences held by energy giant Santos. Join us all week as we talk to people in the region who are likely to be impacted by any mining activities and are mobilising against them. In 2012, the Australian culinary landscape was experiencing a Mexican food wave. But there were a few things missing. Mexican-born Gerardo Lopez especially lamented the lack of traditional corn tortillas. He got busy researching, testing, and eventually making tortillas from locally grown grain. The vision has since expanded from a small-scale side hustle to La Tortilleria, a factory that processes hundreds of tonnes of corn annually, sends tortillas all around Australia and exports them to Asia too. We’ve done 500 episodes of Dirty Linen! To celebrate, we’re spending time at a restaurant that’s been a special place for Melbourne milestones for more than 20 years. Vue de monde was founded by a fiercely ambitious Shannon Bennett in 2000. From its beginnings in a quirky terrace in Carlton, it moved first to Normanby Chambers in the city and then in 2011 to its current home on level 55 of the Rialto Towers. Our first guest is executive chef Hugh Allen, who first worked at the restaurant as a 16-year-old apprentice, and returned after three years at Noma in 2018 to be promoted to lead the kitchen when he was just 23. This is the first of nine episodes that will give a rounded portrait of a restaurant that’s been both lauded and controversial over two decades. We are marking Vue de monde, but we’re also marking a podcast anniversary. Thank you to every single guest who has trusted us with their story.
