It's home to the oft-Instagrammed watermelon cake but now has a new owner in Louis Li and a new range under Arnaud's stewardship. We talk about his early career at Taillevent in Paris, an interesting stint teaching patisserie to Vietnamese fishermen and the fine balance of classic techniques, creativity and consistency.
