Today's recipe is Vegan Bolognese.1 cup dried brown or green lentils OR 2 cups canned lentils, rinsed4 cloves garlic, one whole and 3 minced, divided1 bay leaf3 Tbsp. extra-virgin olive oil1 yellow onion, diced2 ribs celery, diced2 carrots, peeled and diced1 tsp. dried oregano1 tsp. kosher salt¼ tsp. red pepper flakes2 (28-oz.) cans whole tomatoes with their juices2 tsp. sugar1 pound spaghettiIf starting with dried lentils, rinse the lentils in a fine-mesh colander to remove any dust or debris. Place the rinsed lentils in a medium saucepan and cover with 3 cups cold water. Add the whole clove of garlic, peeled, and the bay leaf. Bring the water to a boil over high heat.Turn the heat down to low, cover the pan and simmer until the lentils are tender, but still holding their shape, 15 to 20 minutes. Drain the lentils and allow them to cool. (May be done up to one day in advance.)Make the sauce: heat the olive oil in a large saucepan or Dutch oven over medium heat. When the oil is shimmering, add the diced onion and sauté for 5 minutes. Add the celery and carrots and sauté for an additional 5 minutes, until the vegetables are softened.Add the minced garlic, oregano, salt, and red pepper flakes and stir to combine. Sauté an additional minute, just until fragrant.Add the canned tomatoes with their juices, breaking up the tomatoes with your fingers or a wooden spoon, and sugar. Bring the sauce to a boil over high heat.Then, reduce the heat and simmer until slightly thickened and reduced, about 20 minutes.While the sauce is cooking, bring a large pot of salted water to a boil. Add the spaghetti and cook to al dente according to the package directions. Drain.Add 2 cups of the cooked lentils (or the drained and rinsed canned lentils) to the tomato sauce and stir to combine. Taste and adjust seasoning, adding more salt if necessary. Simmer just until the lentils are heated through.To serve, divide the spaghetti evenly among four plates or pasta bowls. Top with the tomato-and-lentil sauce. Garnish with torn or sliced basil leaves. Serve immediately. Today's recipe is Stuffed Poblano Peppers.3 small boneless, skinless chicken breasts, cut into ¼-inch pieces1 (4 oz.) can diced green chiles1 and ½ cup crushed corn tortilla chips1 (19 oz.) can red enchilada sauce1 and ¼ tsp. salt, divided2 Tbsp. olive oil4 large poblano peppers1 cup leftover white or Spanish rice, divided2 cups shredded Cheddar or Colby-Jack cheesePreheat oven to 425° F.In a large bowl combine the chicken, green chiles, crushed tortilla chips, enchilada sauce, and ¼ teaspoon of the salt. Set aside.To a large baking dish add the olive oil and remaining 1 teaspoon of salt. Mix and spread across bottom of baking dish.Cut peppers in half lengthwise so that you have two wide pieces each. Remove seeds and white membrane. Transfer peppers to baking dish and toss in salted oil until all sides are well coated. Turn peppers cut side up in baking dish.Spoon 2 tablespoons of rice into each pepper half and spread evenly. Add about 1/8th of the chicken mixture evenly into each pepper half.Place baking dish in oven. Bake 25 minutes.Remove dish from oven. Top each pepper with cheese. Place dish back into oven. Bake 5 minutes more.Remove dish from oven. Today's recipe is Crispy Air Fryer Chickpeas.1 (15 oz.) can chickpeas, rinsed, drained2 tsp. olive oil½ tsp. salt½ tsp. favorite seasoning blend (optional)Set air fryer temperature to 375°F.Using paper towels, dry chickpeas well.Transfer to a medium bowl. Stir in olive oil, salt, and seasoning.Transfer chickpeas to air fryer basket. Insert basket into air fryer. Cook 20 minutes, or until chickpeas are desired crispness, shaking basket halfway through cooking.Transfer crispy chickpeas to a serving bowl. Serve warm or at room temperature. Today's recipe is Pour-Over Veggie Pasta.1 lb. dry spaghetti10 oz. cherry tomatoes, roughly chopped2 large zucchini, finely diced¾ cup olive oil½ small onion, minced6 large garlic cloves, minced4 sprigs fresh oregano (or ½ tsp. dried)½ tsp. saltIn a large pot of salted boiling water, cook spaghetti according to package directions, about 8 to 10 minutes.Meanwhile, in a medium skillet add olive oil, onion, garlic, oregano, and salt. Warm over low heat. Remove from heat when oil begins to bubble and simmer, about 3 minutes.In the bottom of a colander large enough to drain pasta, add the tomatoes and zucchini. Place colander in clean sink.When pasta is cooked to your liking, pour it and the hot cooking water into colander over the veggies. Allow the water to drain over and past the veggies, and out of the colander, and then down the drain. The hot pasta will remain above the veggies. Let stand 1 minute.Transfer pasta and vegetables to serving bowl or platter. Pour olive oil mixture over pasta, toss to coat. Serve warm.
