It's all about the Charcuterie - which does NOT include chocolate! Nor does it include cheese, according to Diana Brier, the proprietor of Valley Cheese & Wine in Henderson. But it DOES include a lot of tasty meats, with cheese as an accompaniment, according to the man who literally wrote the book on the subject: Jeffrey Weiss of Valencian Gold. His book is "Charcuteria: The Soul of Spain."
