The Brew Is Out There! What's this? What's this? It's a new show from us! The Brew Files is our quick hit (~30 minutes) show dedicated to a specific brewing topic. No news, new extraneous guffawing and jawing – one topic, all beer, let's do this. Every week will tackle particular recipes, styles, techniques or ingredients. RECIPE DESIGN SHOW For our inaugural episode, we each break down one of our favorite recipes and explore the why's, wherefores and how's of each. Where did they come from? What have they become and what did we learn when we made them. Denny tackles one recipe everyone knows him for – the much beloved Denny's Bourbon Vanilla Imperial Porter. Why did he first make the recipe? Why does he skip the oak and go straight for the whiskey? Drew walks everyone through his hybrid American Saison – Springtime in Amarillo. Episode 31 – Brew Years Resolutions

Happy New Beer! In the feedback we talk over a few things, like our missed quick tip last week and what does it mean when a beer is truly awesome. Episode 28 – Uncommonly Common

On this pre-Turkey Day here in the US, we found ourselves back in Portland in this episode and we're at a brewery right up Drew's alley! We start in the pub with a brief discussion of what fine beers we'll be supping on while we're stuffing ourselves silly. We also look at some charity from No-Li Brewing, a rather “innovative” beer addition to the Not Your Father's lineup and Mike Tonsmeire's Kveik experiments. In the brewery, we examine the speciality malt market and what it means for the tide of craft beer styles from a global perspective and Drew talks about revisiting one of his favorite projects from the past with White Labs Zurich Lager strain. In the lounge, we visit with Sean Burke at Common's Brewing where we explore their farmhouse centric approach and how they grew into a beautiful space with strange equipment. Episode 27 – One Year of Silliness

Has it really been one year? Yup – The first episode of Experimental Brewing appeared on November 11th of 2015. The tricky part is we taped that first show at least three times. Episode 26 – New England Righteousness

One full year of Experimental Brewing is in the books! (So much editing, so much umm and ahhs) But that’s beside the point – on with the show! We tackle some user feedback around Drew’s keg purging methods and Denny’s feelings on Nugget hops. And then it’s into the pub where we tackle the big news about ABI’s acquisition of Northern Brewer/Midwest. We’re puzzled – are you puzzled? Join us in being puzzled! Drew talks about his experience with Cask Marque and finding righteous beer bargains. In the brewery, we talk about the beauty and performance of JaDeD Brewing’s chillers. Seriously, these things are great. In the library, a little comedy courtesy of McSweeney’s from a listener and a new podcast from the Master Brewers Association of America for your actual knowledge. In the lab, we discuss the results of our first New England IPA experiment – Wyeast 1056 vs. Wyeast 1318. Can tasters taste a difference? What about the haze? The Hop character? Episode 25 – BrewTan Your Questions Away

Episode 23 – The Great Hop Whirlpool of Bainbridge

Busy Episode this time! Crammed with like – additional feedback to last episode's Staling results. Seems like some of you have been using scary old grain! In the pub we stop and talk a while about Denny's Hop School experiences (more on those later), the law in California and the crushing “loss” of Bosteels Brewery to ABI. (Maybe they should be Boo-steels now?) and one brewery's response to the recent PR campaign to try and make everyone feel better about the buyouts. We swing by the brewery to talk about Drew's recent Saison yeast tasting – which you can find online. In the library we visit a couple of papers on yeast genetics. Episode 21 – The Myth of Mino

We stop in the pub to do a little talk about mashing obsessions and the law and homebrewing. We head to the library to talk about Scott Janish's article on DMS, causes and cures and his test. Denny and I talk about his favorite homebrew myths before he heads to the land by the waters – Milwaukee – where he talks to Mino Choi, a homebrewer with a culinary obsession and a couple of 50 point entries under his belt. Mino talks his process, his designing and some agressive techniques he uses to drive his fermentations. Episode 18 – Saison Under Pressure

Episode 16 – Lucky Transplants

It's HomebrewCon Week! As this episode goes live we're at the hotel in Baltimore getting ready to rock out with some homebrew! So this episode is going to be a real “quick” one (for us). In feedback Denny talks about a great response he got from Spain and then Drew has to issue a correction from the Correctional Department of Corrections about a misstate he had about yeast strains. In the pub, we talk our “plans” for Homebrew Con in Baltimore in June – a live Q&A, a Troubleshooters Corner, Book Signings and more! Denny recounts his experience with the first “Zymurgy Live” put on by the AHA featuring Stan Hieronymus. Then Drew talks a bit about what might be a trend for the furutue of brewers pulling back from distribution. For the interview segment in the lounge, Drew interviewed two breweries located a mere 500 ft from each other physically but a world apart in terms of brewing philosophy. Our victims this week are the fine folks of Transplants Brewing and Lucky Lukes Brewing in Lancaster CA – about as far on the edge of Los Angeles as you can get. One is all about the whacky, the culinary, the mad while the other is more traditional with classic beer style approaches. Drew talks to them about their experiences as brewers and how it works to have such proximity to your fellow brewers. Lastly, Drew offers a tumblr account that explores the nerdy obsession of mashups. Episode 15 – All About the New England IPA

As we get ready to head to the NHC, our schedules get a little screwy (we have one more episode before the Wrath of Conn Con) In feedback we hear about some fun experiences and a nice gesture on the part of a listener. Also we hear from others about Denny and Marshall's recent commentary about skipping over aeration/oxygenation In the pub, we talk our “plans” for Homebrew Con in Baltimore in June – a live Q&A, a Troubleshooters Corner, Book Signings and more! The Brewers Association gets their history on with one of America's great institutions – The Smithsonian. Denny talks his overwhelming experience at the Craft Brewers Conference. And lastly we ask “Has Craft Beer Gone Too Far?” In the library we discuss a great article from the Counter Brew website that does a really excellent job laying in the ground work for your knowledge about Brett. At the lab where we talk the recent obsession with the hazy style called “New England IPA”. Specifically we cover the history and the theories behind the style and the infamous, hotly debated murk. And so we're going to launch a full series of explorations, because of course we will. For this first time, we're going to look at yeast impact – namely Wyeast 1056 and Wyeast 1318 in the same wort. Is one murk-tastic? And to back it up, listener Jason Faylor sent in a pair of beers with exactly this same premise so we get our tasting on (and prove that Denny and Drew can really disagree about things) For the interview segment, we grab some time with John Holl – editor of All About Beer Magazine. Episode 14 – Season of the Bruce

Episode 12 – Going Stale

It's Episode 12 and we're announcing our next experiment amongst other things! We start with listener feedback – everyone was intrigued by and puzzled by the results of our First Wort Hop experiment. So were we! At the pub, we talk about how the results of the GC election with lots of teasing that's not meant to be taken seriously! We announce that we have “plans” for Homebrew Con in Baltimore in June. Here's how you can use that….HSI shows you the alpha acid loss in the hops over 6 months at a 68F storage temperature. As an example of how it works, let's say you have some hops that start at 10% AA and have an HSI of .250. That means that in 6 months of storage at 68F, the AA% will drop to 7.5%. But since we all know that degradation of hops also depends on temperature, if those hops are stored at 28F, the AA is 9.0%. In effect, each 10F drop in strage temp equates to about .5% AA increase. There's more to it than this, though, and in the future we hope to have someone from YCH on to talk about HSI. Episode 11 – First Hops Then Rodney

Episode 10 – You've Got Questions, We've got “Answers”

It's Episode 10 and it's finally time to see if we're as smart as we say we are. Episode 9 – Session, Session What's Your Libation

It's Episode 9 – last call for questions before the big Q&A episode! (Send your questions to [email protected]) We run off to the pub and discuss feedback abut the potential canning crisis, the unbearable BS of science, the now sold out Pacific Northwest Homebrewers Conference and Hops in Drew's hometown. Episode 8 – A Southern Whirl

Episode 7 – A New Faction

In Episode 7 – Denny and Drew take a spin through listener reactions to the first experiment results unleashed online and in the podcast. Episode 5 – Whirlpooling Around the Yeast Bay

In Episode 5 – Denny and Drew look back at the Brew Year's Resolutions where we've had a bunch of feedback from listeners. We talk in the pub about the latest in acquisitions with the sweet spicy addition of hypocrisy – throw in a little competition and Denny's soon to be appearance in Vail. After that we return to the lab to present our second experiment. This time we're exploring if throwing hops into a whirlpool steep at a lower temperature (120F) makes a qualitative difference in the beer over throwing them in at the “new” recommended temperature of 170F. In theory, 120F should preserve more of the volatile aromatic compounds we care about, but does it actually matter? Episode 4 – Brew Year's Resolutions (A Meditation on Possible Failure) and the Best Amendment

In Episode 4 – Denny and Drew reflect on the feedback we received about our discussion of the decline of homebrewing before we head to the Pub to talk about socially conscious brewing projects like Lady Justice Brewing in Denver and we talk about the Brew Tube community and how they're coming together after a loss. After that we return to Casa Verde to make plans and let the universe laugh at us as we reveal what our Brew Years Resolutions are. Seriously, that's just asking for failure.
