Episode 55 – Hitting the Books with Cellador
On this week's episode, we correct things we got wrong, sit down and look at some different responses to the whole beer name and respect issue, talk about how an early San Francisco craft brewer is coming back and why their move feels similar to Widmer's recent moves and explore the idea of Black Friday Counter Programming the Goose Island Bourbon County Frenzy. Brew Files – Episode 23 – Traditional Traditions with Jeff
The Brew is Out There! PROCESS SHOW Drew sits down with Jeff Alworth, writer of the Beervana blog and podcast and the recent The Secrets of Master Brewers to talk what lessons Jeff discovered while touring a bunch of different brewing cultures. Together they explore the notion of national brewing identities and why many factors, including the Cold War, make the beers of Bohemia radically different from the beers of neighboring Bavaria. Episode 53 – In the Barrel with the Bills
On this week's episode, we sit down and look at the world of trademarks and lawsuits involving some of the biggest and smallest breweries, pay to play in the barroom and the most British pub story, ever. Then we dive into a wonderful presentation from lambic master Frank Boon and the BA's newly announced hop breeding program before Drew sits down with “Doctor” Bill Sysak and Bill Sobeiski at the newly (30 days is new right?) opened Wild Barrel Brewing of San Marcos. Find out their long beer history and how they moved from Stone to a place of their own. And then of course, we hammer out some questions – including what do you think – should you be required to create your own recipe for competition? Then a quick tip and a super something other to get you set for your week. Episode 49 – Brewing Cerveceros Style
Back to our regularly scheduled programming as we stop by the pub to talk the newly updated Brew Guru App from the AHA, a bit of beer business, including something positive about ABI and a reason Drew is proud of his mom. We jaunt quickly through the library for a funny article about goldfish and a BrewTan B announcement (spoiler: it's coming soon from our sponsor BrewCraft USA!). In the Lounge, Drew sits down with Roberto Hernandez of the Monrovia Homebrew Supply store and Ray Ricky Rivera and Luis Martinez of LA's first Latino focused homebrew club – the SoCal Cerveceros about why having a Latino club is important to the hobby and what their cultural heritage brings to the hobby. Then naturally we swing out with a few questions, drop a quick tip, Drew raves about a new book triology he found and finished between recording and publishing. Brew Files – Episode 17 – The Family That Brews Together
The Brew Is Out There! RECIPE SHOW On this week's episode of the Brew Files, it's a family adventure on the high seas as Drew sits down and talks to his brother in law, Chris Geisler, and sister, Aimee, both homebrewer. Together they talk about a handful of recipes including a Thai inspired Witbier turned commercial Pale Ale and Aimee's venutres into “good” beer and how she and Drew collaborated on a beer (and disagreed) and how she won a medal for embracing her hoppy side. Episode 47 – We've Got the Arts in a Bag
We're back at it in our last to go show before the Q&A! ([email protected]!) In the feedback section, Drew eats a big ole helping of crow for failing to hold to his stated principles. In the Pub – we talk about our Wyeast Q3 Private Collection Strains Contest and reveal the three winners and their recipes. Link below for the recipes themselves. Thanks to everyone who entered and our good sponsors at Wyeast! Then it's back to the business of beer with the latest round of acquisitions including Funky Buddha, Anchor and the really interesting combination of New Belgium, Dick Cantwell, Oud Beersel and Magnolia. Are we finally at that same tipping point where over expansion is pinching some brewers like Magnolia and the recently annouced to close Rubicon? In the lab, we actually invite in a guest as BrewTube's Short Circuited Brewers (Brian Huntley) makes us do a triangle test on the mics. What experimental madness is he up to and can Denny or Drew get it right? You're just going to have to listen to find out! And then in the lounge, Drew sits down with Devon Randall of Arts District Brewing and talks about leaving LA to become a brewer and coming back to the city and landing in a warehouse formerly run by a crazy man (Crazy Gideon). Devon's making a hell of a spread and you should give it a try. We race over Q&A because hey – you should be getting us questions for Episode 48! But we do take a moment to hit a quick tip about exploring your different varieties of specialty ingredients and Drew drops two things in Something Other – a hysterical set of Game of Throne recaps from BlackNerdProblems and the ongoing constantly moving CA Pinkham column “Off the Menu” with awful wonderful stories from the world of restaurants and bars. Episode 46 – Chilling Out in Chile
It's time to swing way South of the Border and head to Chile with Denny as he attends the 2nd Annual South American Cup in Santiago, but first we look at your canning feedback. In the pub, we sit down with a couple of special beers (and Drew gets to be right!), talk about Ostrich boot based silliness, bootleggers in Peru (Indiana) and what the new model of acquisitions seems to be currently with Lagunitas buying part of Shorts and Brooklyn, 21A and Funkwerks teaming up. In the library, we take a swing around Dr. Charlie Bamforth's recent speech in Australia about Craft Beer and the things he thinks brewers really need to be focusing on. While in the Brewery we talk about the upcoming Green Hop extravanganza from YCH Hops. And then in the lounge, we sit back and listen to Denny's memories of his trip to Chile and we even hop in the back of a crowded vehicle shepharding Denny to the foot of the Andes mountains and Tübinger Brewery in the middle of some of the world's premier wine country. While there Denny talks with Charles Flaskamp about the brewery and his beers. Finally we race over Q&A because hey – you should be getting us questions for Episode 48! Episode 45 – Advocating for Beer
We start with our next charity effort, before we head to the Pub, where we revisit the Brewers Association's Independent Beer Seal and reactions to it, talk about Denny's trip that is currently as we go live stll has him in the air, a brewery open and a close as well. In the library, Denny explores Scott Janish's recent exploration of trying to make a clear NE IPA, and how you have to pay attention to grain proteins and hop polyphenols. Over in the brewery, Drew talks his new love – a cranky old style machine for making beer cans at home and just how much he can't wait. (Odd for a guy who hates bottling!) Then in the Lounge, Drew sits down at Arts District Brewing with recent California transplant, Todd Alström, one of the founders of BeerAdvocate.com. They cover just how the brothers founded a beer review site all the way back in the infancy of the internet (1996), changes he's seen in the industry – including the first Craft Beer bubble and what he thinks of whales, trading and the IPAfication of everything. We tackle a pair of questions (Hey, Episode 48 is a Q&A – get some questions to us!) Episode 44 – Pocket Pitching Seals
UPDATE: Sorry, we had a bad render on our Bob interview. If you download again, you should be able to hear Bob now! We start, as always, with your feedback and recap our successful charity effort, before we head to the Pub, where we reminisce about HomeBrewCon and what we did and enjoyed. We talk about a new seal (no not that one – that's later) and about Russian River's success and planned sale. In the library, Drew takes a little bit of time to talk about Patrick McGovern, the Indiana Jones of Beer, and his latest book, Ancient Brews. In the lab, we break down the results of our UnderPitch experiment – what went right and how Drew sorta, kinda goofed part of the whole thing. (Yeah, he's fired). What does happen when the freshest yeast you can get meets wor in two very different quantities? Then in the Lounge, it's another double dose of interviews – first, live from the Southern California Homebrewers Fest, Drew and Marshall Schott (Brülosophy) interview Joshua Kunkle about his portable pocket randall infuser with a less than work safe name! Then, Denny and Drew sit down with Bob Pease, the CEO of the Brewers Association about the newly introduced “Independent Beer” seal (note – not craft beer seal as Denny states). We skip over questions this week (Hey, Episode 48 is a Q&A – get some questions to us!) We do drop a quick tip and Drew reminds us why movie trailers can remind you of some awesomely non-family friendly music. (Seriously!) Episode 42 – Hopping and Festing With Nick
Hey, guess what – it's our first repeat guest! (We think – who can keep track?) But first, an announcement: Homebrew Con (15-17) 14th – 6:00 PM Trivia at Chop & Bru Party – See ChopandBrew.com for ticket details 15th – Hold My Beer and Watch Me Science 16th – Panel: Building a Great Homebrew Club / Craftmeister / Book Signing / Podcast at BrewCraftUSA Booth 17th – Denny Rests, Maybe In the feedback, we take a moment to re-visit some questions about Bio-Transformation and address some very pointed criticism about our Brew-Tan experiment. In the pub, we enjoy a pint or two we raise a pint to Peter Simpson, talk a big beer slide, how to avoid selling out to the IPA-borg and a Chinese Bud Bust. Inspired by the MBAA Master Brewers podcast, we stop by the library and look at Barth-Haas's latest dissection of hop flavor and aroma as spurred by all these fancy new hops we have at hand. We stop in the brewery to review Drew's reviews of several malts, including those from our sponsor, Mecca Grade Estate. Which malt will reign supreme? Then in the Lounge, it's a double dose of interviews – first, live from the Southern California Homebrewers Fest, Drew and Marshall Schott (Brülosophy) interview Kevin Baranowski about his attempt to wake everyone up at the Fest with a Sweet Stout served through a Randall stuffed with Bourbon soaked coffee beans. Then, with podcast magic, we blink our eyes and suddenly Drew swings up to the Bay Area and catches up with Nick Impellitteri about what's happening with the Yeast Bay. Finally we tackle questions we can answer. Drop a quick tip from a listener and inspired by our last Brew Files episode and Denny talks about his newest PBS obsession! Episode 41 – Earthbound and Down
We're loaded up and trucking right through your feedback. In the pub, we enjoy a pint or two while looking back at a big retirement, talking some new guidelines and wondering maybe we've been looking at the whole “bubble” thing wrongly. We stop in the brewery to look at Sierra Nevada's Ruthless Rye recipe and why Denny gave them a bunch of guff for it when they were making it. (Plus Drew's weird feelings about late additions of Magnum) Then in the Lounge, Denny talks to Rebecca Schranz – the Queen of Getting Shit Done- at St. Louis's Earthbound Beer about expansion, taking over an old brewery space and what happens when you find a hand to god Bat Cave in your cellar. Finally we tackle questions we can answer. Drop a quick tip on ya and Drew reveals he's deeply weird about notebooks. Brew Files – Episode 10 – Getting Hazy with Ed
The Brew Is Out There! STYLE SHOW On this week's episode of the Brew Files, we're exploring the controversial style of the moment – New England IPA. And since Denny spits nails about anything “hazy” and “juicy”, Drew's bringing in Ed Coffey of “Ale of the Riverwards” to talk the style he's been brewing since before he knew it was a style. Together they talk about the ingredients, the hops, the flavors and of course the haze and it's meaning. Episode 40 – The Quality of Transformation
New opening to the show this time through. Let's see how you like it (let us know!) In the pub, we stop by and take about brewery charities and one in particular for Denny's area. We talk about one previous guest's new “kid” rules and the response, before we tackle the big Wicked news of the week and the really insidious piece that virtually no one is talking about behind the scenes. We stop in the brewery to talk the latest malt report from our good friend Teri Fahrendorf and Denny reminices about the good old cow and hog reports of his youth. In the lab, we announce our latest experiment – the IGORs are taking a stab at the Brulosophy gang's Biotransformation ale – aka can you tell a difference between a beer dry hopped at high krausen and one dry hopped in secondary. Of course, we're adding an extra special twist to the whole thing because we're required to by law. Twist one, testing two different strains with some IGORs pulling out Wyeast 1318 and some pulling Wyeast 1056. Twist two – we're going to have some visually blind trials vs visual trials. Woo… Then in the Lounge, Denny talks to Jessica Davis of the Bruery about what it means to do QA work for a brewery with as many on going projects as they have. It's seriously interesting to learn what it means to work in the beer world and be tasked with keeping an eye on things Finally we tackle questions we can answer. Drop a quick tip on ya and explore just why Drew wants to subject one of his chihuahuas to dangerous acrobatics. Episode 39 – Tanning in St. Somewhere
In the pub we congratulate our new members of the Governing Committee; explore what we think of the Brewer's Association recent announcement regarding sexist beer names and celebrate the sort of beery fool hardiness that lead one “intrepid” soul to attempt a beer half-marathon. In the lab, we take a piece of feedback from a listener about what we did wrong with our BrewTan announcement and then, like a dog with a bone to worry, we decide to revist the results thanks to some new IGOR reports and watch how the numbers change. We'll discuss new directions that we want to explore as well. Then in the Lounge we visit one of Drew's favorite brewers – Bob Sylvester of St. Somewhere Brewing in Tarpon Springs, FL. Learn just why we have a photo of a pump and a skateboard in the show notes and just how Bob produces “Florida terrior” and what measures he took to preserve it when the brewery moved. Brew Files – Episode 8 – Down Under with Peter Symons
The Brew Is Out There! STYLE SHOW On this week's episode of the Brew Files, Drew sits down with Peter Symons, the author of Bronzed Brews – a collection of recipes and research of Australia's fascinating history of brewing. We talk about the experience of delving into brewery archives. Why Foster's isn't Australian for beer. Episode 38 – Gluten Free Tanning
Stand back everyone and hold our beer – we're going for a shorter show today! (Suspect Denny might need a temporary break from editing or something) We do the feedback circuit, including a visit to the Correctional Department of Corrections, and then hit the pub for our recollections of Session Beer Day, some of our favorite April Fool's pranks from brewers (including one that wasn't actually a prank) and the upcoming Big Brew In the lab, we finally have our results in from our BrewTan B experiment that we started last year. What do the guys make of the results and we talk with Joe Formanek of Anjinomoto about what they mean. Then in the Lounge we actually visit a question that came in from a listener about her challenges making truly gluten free beer. Since neither of us are gluten free experts, we rope in an actual expert – James Neumeister of Portland's Ground Breaker Brewery, a gluten free brewery. Finally we tackle questions we can answer. Drop a quick tip on ya and explore one reason Drew would have something positive to say about the New York Yankees. (No, hell has not frozen over and yes, it involves dogs.) A little different show this week and we warn you – it's a long one! We hit three main topics today, but first feedback. With April Fool's Day right around the corner, it's time to explore how foolish we brewers are with a bunch of disasters stories! Stay safe people! Then it's back to the Jeopardy stage where we questions answers about Recipes, Water and Troubleshooting – wait, strke that, reserve it. And then – we talk with Gary Glass of the AHA about the Governing Committee and the election. Final votes are due by 3/31! So stick around and listen to the candidates! Brew Files – Episode 6 – Zen and the Art of Recipe Design

Episode 35 – The Mead Is In Session
We start with a round of feedback including a question about a potentially new style guideline and a reflection on one listener's experiment in making Cool Ranch Beer! In the pub, rumblings are a foot about the Return of the Wrath of Conn at this year's HomeBrewCon in Minneapolis. We tackle the problematic notion of “fake craft” beer and All About Beer's newly announced policy on sexist beer names. Over in the library, a brief look at one of Drew's favorite malts – Maris Otter And in the lounge it's a twofer as we talk again with over favorite Lew – Lew Bryson about 2017's Session Beer Day (April 7th). We encourage you to get ready for it by brewing up a batch of something “small”. And then we leave the land of the small and head back to Fargo where Drew sits down with our good friend and long time BJCP/AHA leader, Susan Ruud, at her meadery – Prarie Rose. Quick tip comes with video evidence this time – careful when you're degassing folks! And Denny closes us out with a PBS show all about music. Episode 33 – The Bitter Truth
In the feedback we take a moment to not only reflect on the launch of the Brew Files, but to also remind folks about the difference between companies and people particularly when the snark is flying in podcast land. We donated $688 to the Children's Tumor Foundation in the name of the listeners. Thanks to Robert Allaway for the suggestion. Reminder our charity is now the San Gabriel Valley Humane Society. Let's try and raise enough funds via Patreon to hit a cool thousand by July! Why were some of the IGORs dead on and others way low? We talk to five IGORs about their brew day experiences and try and see is there a common culprit? Saw Hi to Kevin Kolk, Dave Matson, Ben Myton, Mike O'Toole and Jeremy Wickham. Lastly, we swing through a super quick suggestion of a not so super quick podcast. They just dropped a six hour episode!
