After working his way through Michelin star restaurants in England and France Emrys Jones (Porter House Hotel) had a hankering for travel. After scouring potential moves he landed a job at luxury resort Qualia in Hamilton Island, Queensland and fell in love with the sea to plate access of seafood. It lead to role with one of the world’s most influential seafood chef Josh Niland, and finally to a dream role where he is now overseeing a huge new development with a multitude of offerings in the heart of Sydney.
