Rather than dwell on an uncertain future when the Covid-19 pandemic landed, Ellie Hayes O’Brien (Babs Pops Up) saw it as an opportunity to launch her own food offering. She teamed up with a friend and fellow food professional and launched a pop up that allowed both of them to express themselves and do what they do best.
