After learning the foundations of cooking at Bangalow Dining Rooms Dylan Cashman (The Blue Door) landed roles in some of Australia’s and Europe’s’ best restaurants. Although he learnt the technical precision require to cook at the top level, he felt a greater connection to producers and letting produce speak for itself – now the hallmark of his offering at his new restaurant in Sydney.
