Ep 235235: Barrett Tillman of BlackMan Brewing Tells Stories Through Beer
EBarrett Tillman’s love affair with yeast started innocently enough—as his small group of homebrewing friends divided up brewday tasks, he arbitrarily chose yeast duty. Little did he know that choice would turn into a passion that would define his brewing career for the past decade. Homebrewing led him to pursue brewing professionally, and over the course of a few years and a few different positions, he eventually landed at Deep Ellum Brewing in Dallas, where he became head brewer. Sour beer has long been his passion, and even in this commercial environment, he was able to bring his fermentation experience to bear, launching the brewery’s first kettle-soured beer. However, a series of events led Tillman to question the systemic culture of craft beer and the toll it can take on individuals. The social requirement to be chief party officer led him to do things that he ultimate didn’t feel comfortable doing—from leading bar-wide beer chugs to drinking in an unhealthy way. Those behaviors ultimately led to a crux moment where Tillman was arrested for DWI while parked in his own driveway. In this episode, Tillman recounts those experiences—the pressure to conform to a brewing culture that privileged the party (and beer sales) over people; the downside of compounding factors that led to him questioning his future in brewing; and the sabbatical and realization that caused him to search for new ways of working in the brewing world, to satisfy his need for authenticity and connection. Today, Tillman runs his own brewing project, BlackMan Brewing, via contract-brewing arrangements with brewer friends in Costa Rica. On top of that, he’s working on projects stateside to extend the brand, and the philosophy of beermaking, in meaningful ways. Ep 234234: Pierre Tilquin of Gueuzerie Tilquin Makes Lambic and Gueuze with Lively Spirit and Mathematical Precision
EPassionate people tend to have exacting ideas of how to do things, and Pierre Tilquin is no exception. The founder of Gueuzerie Tilquin has spent more than a decade now buying lambics from classic houses such as 3 Fonteinen, Cantillon, Boon, Lindemans, and Girardin, aging them in his own facility, and finally blending them in carefully considered ratios. A perfect blend isn’t solely based on taste. For example, making sure that the blend has the perfect amount of residual sugar to re-ferment in the bottle to the appropriate carbonation is of utmost importance. But some of the assumptions about lambic—such as the idea that young lambic provides the fermentable sugar for bottle-conditioning—has not always proven true in Tilquin’s experience. Certain producers tend to produce lambic that finishes at higher or lower gravities. Some years, weather and culture conditions can alter the expected fermentation arc. That leaves Tilquin to do what blenders have done for centuries: use the tools at their disposal to build blends that are not only artful and inspired, but also functional. Ep 233233: Urbain Coutteau of Struise Brouwers Shares Some “Peasant Intelligence”
EStruise Brouwers is scrappy, in the best sense of the word. Small and underfunded from the start, they’ve always made the best of what they have, and figured out no-cost solutions to brewing problems. After all, you can’t spend money you don’t have. Today, the brewery operates with a brewhouse that is as unique as their beers—two mash tuns, with internal vessels and screens that lift and drain the mash, to feed three separate kettles. The team brews four turns per day on the system, filling a fermentor one-quarter full as fermentation starts. Over the following days, subsequent brews fill the tank as the carefully controlled fermentation progresses. By adjusting the mash temperatures of each day’s brews, they’re able to approximate a step-mash regimen without tight temperature control and automation in the brewhouse. Ep 230230: The Bitter Truth About Belgian Beer With Nino Bacelle of De Ranke
EWhen Nino Bacelle and Guido Devos started homebrewing together in the 80’s, Belgian beer was in the midst of a sea change. Consolidation was afoot as larger industrial breweries swallowed up smaller concerns, while an earlier generation of brewers had reached retirement age with few of the younger generation interested in carrying on the brewing tradition. The beers that they loved and grew up drinking were disappearing—subsumed by a wave of sweeter mass-produced crowd-pleasing beers. To be fair, there were (and continue to be) some historical holdouts. But generally speaking, bitterness was slowly leaving the lexicon of Belgian brewing. Bacelle, who grew up around beer (his father was a guezesteker, or blender, but did not brew), longed for the beers he had tasted growing up. Together with homebrewing partner Devos, he decided to launch a beer brand, De Ranke, to address the opportunity they saw in the market for beer that embraced bitterness. First was their Guldenberg Tripel, followed closely by what is now considered a paragon of hop-forward beer, the aptly named XX Bitter. Today, these beers feel familiar, but they were groundbreaking in their time and remain somewhat unique today due to the peculiarities of De Ranke’s process. Ep 227227: Tom Jacobs of Antidoot Is Searching For Simplicity
EAntidoot’s Tom Jacobs didn’t set out with the goal of launching a brewery. It was more a natural outgrowth of his and his brother’s homebrewing, which grew too large to remain just a hobby. Still, Jacobs pursues every one of the small batches they brew with the exploratory zeal that informed their homebrewing days. The brewery and batches are small, intentionally, for two reasons. First, Jacobs is not willing to compromise their creative vision to achieve the scale necessary for a larger corporate entity. Second, they prefer to use the fruit and herbs from their own trees, grapevines, orchard, and gardens—something only viable at their minuscule size. Despite their self-imposed guardrails, Antidoot forgoes other mainstream brewing conventions such as style categories because, as Jacobs says, “It’s hard for people to appreciate things without a concept, but if you give them a concept, they judge against the concept.” Moving beyond preconceived notions of what a beer should be, and encouraging drinkers to approach the beer on its own terms, with an open mind, is Antidoot’s raison d’être. EKelsey McNair of San Diego’s North Park Beer still can’t quite fathom how the brewery walked away with two medals in IPA categories in the 2021 Great American Beer Festival—a silver for their Art Is Hard hazy IPA, and a bronze for their imperial IPA, Army of the Kinda Dead-ish. On the surface, it looks improbable—while they’re both IPAs, their executions are very different. However, McNair says their exploration of hazy-IPA brewing techniques that made the medal for their imperial West Coast IPA possible. Specifically, he says it’s the reduction in heat and their move to minimize the amount of boiled hops that has led to marked change in the quality of their IPAs, regardless of style. On the hazy side, Art is Hard doesn’t see hops until the fermentor (and when it does, they’re not your standard T-90 pellets). On the West Coast side, extensive use of late hopping and advanced hop products mean less vegetal matter and less cooked-hops flavors. E“People who visit the space, they understand and get that there’s this intimate quality to the beer,” says Aaron Kleidon, cofounder of Scratch Brewing in Ava, Illinois. “I don’t think we’ve ever had a desire to add weird things to a beer just for the sake of adding weird things.” In the context of American beer today, Scratch is decidedly weird. From their focus on various ingredients foraged from the property to their intensely manual brewing process, it’s clear that Scratch is an exercise in exploring a different idea about beer—one rooted in place and time. You don’t find many breweries whose yeast choice is determined by the ambient temperature of their water or the ambient temperature of the fermentation cellar, but that’s how Scratch works. That often means pitching their house sourdough culture—the same culture they use for their bread and pizza crust—in the warmer months, while turning instead to brewing lagers in the colder months. You also don’t find many brewers that change up their brewing schedule because a storm took down a tree, and suddenly they have access to a different bark. Indeed, it’s a different way of thinking about brewing ingredients altogether. Their seasonal lager series includes a maibock, Baltic porter, pre-Prohibition lager, and festbier—no wonder head brewer Paul Liszewski’s customized California license plate says “LAGER.” While its sneakily hop-forward yet balanced Bo Pils is beloved by local drinkers, it also gets respect from peers—including a Great American Beer Festival silver medal in 2019.
