Dr. Peter Ballerstedt may have the most appropriate (and incredible) nickname of all time: they call him "Don Pedro, the Sodfather of the Rumanati". He studied and has a PhD in Agronomy and Ruminant Nutrition, but also practices and understands the benefits of a LCHF (low-carb, high fat) diet. His knowledge of soil health, cows' roles in supporting our ecosystems, and human health, places him in a unique position to educate on many of the conflicting ideas floating around about beef.
