Why is my lettuce growing really tall? When your lettuce starts to grow tall instead of out, it means it's trying to bolt. This means it's ready to produce flowers and seeds. When it grows tall like this, it means the end of your harvest is near and the plant is starting to switch from producing lettuce to producing seed.
