In this episode, we speak with Jose Gonzalez. Jose is the chef and founder of Al Mercat, a fine dining restaurant in Costa Rica. During the pandemic, Jose shut down his fine dining concept and moved his entire operation into Costa Rica’s mountain region. Every cloud has a silver lining and while it can be jarring to be forced to shut down your dream, Jose found a new and even better dream that awaited him and his family with a new restaurant concept that he is currently offering in the beautiful mountains of Costa Rica. An advocate for sustainability on all levels, Jose is also recognized as the founder of the Costa Rica: Edible Country concept.
