In 2017, after 6 years of living in LA and searching tirelessly for a bagel that hit the right spot, Zach Liporace decided to take matters into his own hands. After scouring Los Angeles for a bagel that married a soft, fluffy inside with a fresh crispy exterior, and just the right amount of chewiness, Pop's bagel journey began in a small studio apartment in Los Feliz.
