Show Notes

Peggy and Thomas Tomich, economist, advisor, author, innovator, and leader, and founder, Food Systems Lab at the University of California, Davis, talk about the differences between a food system and food science. He says a food system is a self-organizing system and we have to think differently about managing our footprints in those types of self-organizing systems.

They also discuss:

  • The difference between the productionist view and the food systems approach.
  • Where a lot of food waste happens geographically and circularity in the food industry.
  • How technology can make verifiable claims about the sustainability of food.
