Unroll dough onto a baking sheet or cooking stone and form a rectangle, crimping perforated sections together.Spread jam across dough in an even layer. Place brie into certain of dough and fold sides to form a seal around cheese.Bake according to package instructions. Transfer to a serving platter and serve with grapes, whole wheat crackers and sliced apples.Bourbon Sweet PotatoesIngredients4-6 sweet potatoes, peeled and sliced into ½ inch thick roundsCoarse salt and freshly ground pepper to taste½ firmly packed light brown sugar4 tablespoons unsalted butter, plus more for the baking dish½ cup bourbon of choice2 tablespoons sorghum or maple syrupDirectionsPreheat the oven to 350 Butter an ovenproof gratin or casserole dishArrange the sweet potato slices in the baking dish and season generously with salt and pepperIn a large saucepan combine the sugar, butter, bourbon, and syrup and bring the mixture to a boil - as soon as it boils pour over sweet potatoes.Bake, turning sweet potatoes and spooning liquid over the top occasionally, until tender – 45 - 60 minutes. Season to taste.

According to a 2019 American Association of Equine Practitioners (AAEP) Equine Economic Survey Report, most equine veterinarians knew they wanted to be a vet before the age of 10. So many choose this career path because of a calling they felt, and a passion and love for the horse. Still, many areas of the United States and beyond currently face a shortage of equine practitioners to provide veterinary care to horses and other equids. This equine welfare issue will only further intensify without action to address the diminishing number of equine veterinarians. The key factors the AAEP identified that are contributing to the dilemma are: compensation, strategies for effective emergency coverage, workplace/practice culture, internships and supporting the growth and development of the equine veterinary student. Toss/stir well so that ingredients are well-combined.In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.Pour dressing over other ingredients and stir/toss very well.Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.

In recent months, several surveys have been circulated regarding the U.S. horse industry. The American Horse Council’s Equine Economic Impact Survey is one that has been active since April and will be wrapping up September 29. This survey, done once every five years, has been used by hundreds of local and federal groups, horse associations and horse owners to support their industry in times of need. In this episode, four leaders in the industry share how they have used the previous survey’s results to help protect and support their local horse industry, trails and gain recognition for the impact horses and the industry has had on their economy.
