日本人愛吃起司，2024財年日本國內起司消費總量，超過32萬噸。雖然日本市場上銷售的起司，約80%依賴進口。但是過去20年間，日本的國產起司，也不斷擴大自己的一席之地，除了工廠的數量持續增加，採用日本獨特發酵過程，製作的起司，也越來越受到關注。
