There’s a new trend sweeping Mexican cuisine, and you can find it right here in Las Vegas. Unlike the mass-produced grocery store tortillas you’ll find at most taco trucks and restaurants, tortillas made by nixtamalization are more pliable, fragrant, and nutritious. Today, we’re bringing back a conversation co-host Dayvid Figler had with Masazul chef Mariana Alvarado about she’s dedicating her life to bringing nixtamalized corn products to Las Vegas and where you can try them in our city.
