Chocolate Hazelnut Chia Pudding from The Vegiterranean Diet

(Makes 4 servings)

Ch-ch-ch ... chia with ch-ch-ch ... chocolate and combined with hazel- nut is a decadent match made in heaven, especially when it is healthy, too—the chia seeds add protein and omega-3s! This creamy dark choco- late pudding has a nutty essence and is fun to eat with the tapioca-like texture from the chia seeds.

2 cups plain unsweetened almond, soy, or other plant milk 3 tablespoons pure cacao (cocoa) powder 2 tablespoons hazelnuts 6 to 8 medium sized dates 1 teaspoon alcohol-free vanilla extract 6 tablespoons chia seeds

  1. Puree the plant milk, cacao powder, hazelnuts, dates, and vanilla in a blender until smooth, 20 to 30 seconds. Add the chia seeds and slowly blend on low just until combined, 5 to 10 seconds. Allow mixture to sit in blender for 5 minutes. Then, slowly blend once again to combine.
  2. Pour the pudding into individual cups and refrigerate to allow chia to swell, at least 1 hour, or store in an airtight container in the refrigerator for up to 2 to 3 days.
