Due to COVID The IBD Asia Pacific conference will be held virtually from 23rd - 24th February 2021. The IBD is one of the leading brewing training organisations globally, and its conference is open to brewers of all sizes, however, there is a perception that the Institute and its conference is targeted to major brewing companies. To give smaller breweries a taste of what’s on offer at the conference, BreweryPro is speaking to a number of presenters from the 2018 conference in Wellington about their presentations to give you a taste of what this year's conference can offer you. In this conversation, we speak with, Maltster Doug Michael from Gladfield Malt, about the secrets to mashing, as seen by the person who makes the malt. As you’ll see, Doug is no-nonsense and wants to - in his words - cut through the bullshit and get to the nitty-gritty of mashing. And that was Doug Michael from Gladfiedl Malt. Today HPA celebrates that milestone with the hop that has been trialled as HPA-016. It’s a hop that has created genuine excitement amongst brewers. So as HPA launches Eclipse, BreweryPro caught up with HPA’s Sales and Marketing Manager Owen Johnston to talk about the development and commercialisation of the hop, as well as Deeds Brewing’s Justin Corbitt, who has trialled Eclipse as HPA-016, and also used it in the beer Deeds contributed to a special Eclipse launch pack.

Ep 6Professor Michelle Colgrave: Understanding gluten in beer
Welcome to this special BreweryPro podcast looking at gluten in beer. Over the last 20 years we have seen a significant increase in the number of consumers who avoid gluten or identify as being intolerant to gluten, as well as growing awareness of coeliac disease. With traditionally-made beers containing gluten, this has seen a rapidly developing market for beers that appeal to those looking at a gluten reduced lifestyle. However, it’s a complex topic. Professor Michelle Colgrave is an internationally recognised researcher in the field. She leads the Food and Agricultural Proteomics teams at Edith Cowan University and CSIRO, using technology to identify key proteins that will benefit Australia’s food and agriculture industries and improve human health. This week been recognised for major breakthroughs in the analysis of gluten. The research that was awarded has led to the development of an ultralow-gluten barley, now known as Kebari, which is used in the production of gluten-free cereals, beers and food products with all the nutritional benefits of whole grains, while being safe to be enjoyed by coeliac sufferers. Importantly, she is a great communicator of her expertise, as you will hear, making the complexities of this topic approachable.

Welcome to a BreweryPro conversation with Hop Products Australia’s Sales and Marketing Manager, Owen Johnston. The 2020 hop harvest report has been released and it was a mixed year for HPA, with some varieties, including Galaxy up significantly, and others such as Vic Secret down. We talk a lot in the brewing industry about beer being an agricultural product, and this hop harvest demonstrates that. So I wanted to discuss with Owen the 2020 harvest, what led to the result, but also the development and evolution of the Australian hop industry since we first spoke with HPA on our podcasts almost 10 years ago. It’s an interesting deep dive into hop growing and the vagaries of a growing season, what the results mean for brewers in terms of availability and a look back over ten years of growing hops. Kevin Han from Nash Advisory, a Melbourne-based business support and corporate advisory firm told Brews News' The Antidote podcast that the has actively been advising privately owned companies including breweries and distilleries as they confront the current crisis. “What we've found challenging over the last three weeks is that a lot of our clients are coming to us in a tough position because they've got to make some really challenging decisions around staffing, production, and what they need to do with their business,” he said. Han said many directors, owners, managers and staff had invested time and money in their businesses and navigating the uncertainty caused by COVID-19 was an unprecedented challenge. “What we're fielding in terms of calls from our clients is really about business fundamentals. "Cash is king at this point, how do we manage to pay our staff? How do we manage to pay our rent? What are the best levers that we can pull to get us through what could be a couple weeks, a couple months, or potentially longer?” Han said. You can read the full transcript of the advice here.

The Independent Brewers Association is increasing its focus on professional development within the Australian brewing indusrty and has been steering the creation of certificate level courses, including brewery traineeships. It will soon have a guide to training out for members. In this conversation we catch up with IBA Director Richard Adamason. Richard leads the association's People project group and is developing a training plan for the industry in addition to focusing on education, WH&S and wellbeing.
