
Seafood Innovations: Automating the Ike Jime process of humane fish slaughter with Saif Khawaja of Shinkei Systems
Within the seafood world, animal welfare touches on many different topics, and one that is particularly sensitive is the humane treatment of fish at the harvesting stage. There are a number of different ways to humanely slaughter a fish, and one process is called Ike Jime. This process is considered more humane than suffocation and results in higher-quality meat. Saif Khawaja of Shinkei Systems has a plan to automate this process and make it scalable for larger producers and harvesters.
